The Backstory: 
Mysore Nuggets is the flagship Arabica coffee of India. Its name speaks to a place (Mysore, India) and the size of the beans (large), not to how the coffee farmer feels after bringing the coffee down the mountain. Like all things Indian, it is distinctive. Mysore is a mild coffee, but with lots of complexity and nuance. It's found extensively throughout Europe, but doesn't (unfortunately) enjoy the same popularity here.
This particular coffee is a single estate coffee from our friend Nishant Gujer. His farm, Sethuramen Estate, is one of the most biodiverse I have ever seen, and he farms it using biodynamic methods. It is truly one of the most exquisite coffees in all of India.

Cupping Notes:
Full body, complex. Light earth. Nuttiness and aromatics of sandalwood. Savory notes with pepper, and just a hint of blackberry fruitiness.

The Backstory: 
Like many great ideas, this one happened quite unexpectedly. For our first few years in business, we sold quite a lot of aged coffee.  Around 2009, for many reasons, the supply of aged coffee on the market evaporated.
We thought often about aging our own, but the traditional processes require time and environmental conditions present only at origin.  So we gave up on the idea until about three years ago, when it dawned on Jim to try some cask-aging experiments.  The one that rang the bell was pepper cask-aging, done with seasoned Tabasco barrels.  Last year, we aged a nice Sumatra Lintong, as a kind of "calibration point" for the process.  Jim thought it was so unique that he filed a US patent on the process for making this coffee.  This year, with the process proven, we've aged one of our favorite new blended coffees, our Deep South blend.  The aged version is even deeper and richer than the traditional coffee, so we don't roast it quite as dark as the original.

Cupping Notes: 
Big and brooding, full of earth, yet retains a pleasant, low acidity with a hint of pepper in the finish.  NOT SPICY.

We have some great products this week to celebrate the special person in your life.  Let's start off with our Pepper Cask-Aged Deep South .  Why age coffee?  As green coffee ages, its flavor characteristics change. If it is stored in cool darkness it may change very little over the course of years, at most losing some acidity.  Traditionally aged coffees, which are rare, may have been held in warehouses for anywhere from three to ten years, and can be superb: sweet, full almost to a fault, syrupy but clean tasting.  Most unroasted aged coffees are aged in Bourbon barrels.  We were able to get our hands on some Tabasco barrels.  We have taken the barrel,  a fter peppers aged in them, and added our Deep South blend.  This is not a spicy coffee, as one would expect. Instead, it is big and brooding, full of earth, with a hint of pepper.  It is also a low acid coffee.  Since we normally don't discount this coffee, it's a great way to give it a try

Other great products to try are our coffee dry rub.  It is great on everything, including  grilled meat, fish, vegetables.  Sprinkle some on your pot roast before adding to your Instant Pot.  It can even be used in soups for extra flavor.  We also carry a line of Bodum French Presses.  And, they happen to be on sale right now!
