Barb - I'm primarily a pescatarian so I tend to eat a lot of vegetables. I absolutely love this recipe. The broccoli holds up on the grill.

We've been making our homemade version of grilled veggie quesadillas for years! We use a variation of tomatoes, squash, peppers, eggplant, onions, corn, mushrooms, and shredded cheese, but you can use whatever veggies you want. Make sure to serve with salsa, guacamole, and sour cream.

Lisa - I love the taste of veggies on the grill! Brush eggplant slices with oil. Drizzle with lime juice; sprinkle with Cajun seasoning. Let stand 5 minutes.
Grill eggplant, covered, over medium heat or broil 4 in. from heat until tender, 4-5 minutes per side. Goes well with rice, pasta or salad. Click here for the recipe!

I love grilling shrimp on skewers, after they've marinated for a couple of hours in this Olive Oil and Lemon based recipe. Feel free to add additional fresh herbs, I usually put oregano in there.

The summer season is the perfect time to participate in outdoor activities, visit your local farmer's market, start summer reading, and travel somewhere new with friends and family! With my schedule, it's important to spend time doing the things that help me re-focus and boost my productivity. I always have a book on hand wherever I go; reading is one of the best ways to relax and keep my mind engaged. Taking short trips with my girls
and husband is another way that I enjoy the summer, although spending special time with them is something I do all year round.
When the sun is out and the weather is warm, there are plenty of things to do to reinvigorate your soul. My summer motto is to always have plenty of sunscreen, good friends, and a cold beverage!
