Summer is the perfect time for outdoor grilling. To honor this past-time, we asked what everyone's favorite recipe is to prepare!

Barb - I'm primarily a pescatarian so I tend to eat a lot of vegetables. I absolutely love this recipe. The broccoli holds up on the grill. Click here for the recipe!

Timmy -  We've been making our homemade version of grilled veggie quesadillas for years! We use a variation of tomatoes, squash, peppers, eggplant, onions, corn, mushrooms, and shredded cheese, but you can use whatever veggies you want. Make sure to serve with salsa, guacamole, and sour cream.

Lisa - I love the taste of veggies on the grill! Brush eggplant slices with oil. Drizzle with lime juice; sprinkle with Cajun seasoning. Let stand 5 minutes.

Grill eggplant, covered, over medium heat or broil 4 in. from heat until tender, 4-5 minutes per side. Goes well with rice, pasta or salad. Click here for the recipe!

Dana -  We love grilling in the summer - so many fresh and easy things to make. A marinade I've been using on almost everything we grill is a homemade cilantro lime. Lots of flavor and nice and light! Click here for a similar recipe!

Karen B -  I love grilling shrimp on skewers, after they've marinated for a couple of hours in this Olive Oil and Lemon based recipe. Feel free to add additional fresh herbs, I usually put oregano in there.  So easy, delicious and low fat! Click here for a similar recipe!

Karen E -  One of my all-time favorites is Barefoot Contessa's grilled shrimp recipe. It's easy to make and delish! It makes a great app or main dish and goes great with a caprese salad, corn on the cob and a glass of rosé. Love it!  Click here for the recipe.

Sarah - My all-time favorite thing to grill is watermelon! Paired with a yogurt dipping sauce or a spicy dressing drizzled on top, it's always yummy. Click here for the recipe!

Brittany - I just tried Mexican street corn and it was delicious! I want to learn to grill these asap. Click here for the recipe!

Catie -  In the summer I love to grill pineapple. I usually grill the pineapple for about 6 minutes and then drizzle brown sugar and cinnamon on top. It's my favorite summertime dessert! Click here for a similar recipe!

Happy Birthday!

We had a fun month celebrating
Dana's June
 birthday!

July 2018

From the Desk of Barb Clapp...
The summer season is the perfect time to participate in outdoor activities, visit your local farmer's market, start summer reading, and travel somewhere new with friends and family! With my schedule, it's important to spend time doing the things that help me re-focus and boost my productivity. I always have a book on hand wherever I go; reading is one of the best ways to relax and keep my mind engaged. Taking short trips with my girls and husband is another way that I enjoy the summer, although spending special time with them is something I do all year round.

When the sun is out and the weather is warm, there are plenty of things to do to reinvigorate your soul. My summer motto is to always have plenty of sunscreen, good friends, and a cold beverage!
