We have noticed the beginnings of a shift in the world around us as backyard cookouts and small gatherings sprout up with the warmth of the sun. Plenty of uncertainty, worry, desperation and misinformation remain and opinions swarm relentlessly. But this weekend, let's bring it back to center. Whatever your thoughts on all of this, we are lucky to be here thinking those thoughts. And whoever the people are in our safe circles of friends and family, we're lucky to be surrounded by our little tribes. So celebrate having each other this weekend. It’s a simple enough idea, yet we almost always take it for granted. And we almost never remember the sacrifices required of others from which we benefit.
Eat. Drink. Appreciate. This is the good stuff.

On Thursday evening I tuned into a virtual author talk presented by our friends at
Nurture Nature Center. The featured author was Ben Cohen, a professor at Lafayette College (and a market regular). The book was
Pure Adulteration: Cheating on Nature in the Age of Manufactured Food
. It's a thought provoking read that brings up a myriad of questions surrounding the history of the industrialized food system. It turns out that Americans were questioning food safety and manufacturing as far back as the late nineteenth century. Part of the reason I bring this up is that Ben started off the discussion with these three words: trust, authenticity, and sincerity. The very virtues that farmers' markets strive to embody.
There is so much to contend with in the world right now. And when it comes to making decisions regarding the food you purchase, our goal is to be able to provide you with a sense of confidence, and peace of mind. The Easton Market District Advisory Council vets all our vendors. We inspect our farms, looking at growing practices, and animal welfare, and verifying all certifications. We make it our business to
know all our businesses. If they're selling at EFM it's because we trust who they are and what they sell. The City of Easton Health Dept. and the Pennsylvania Dept. of Agriculture provide additional layers of protection.

Jess shared that this week she made honey glazed beets (using Stagecoach Apiaries honey), and sauteed beet greens with garlic, lemon and feta cheese. Two easy side dishes from one bunch of beets!
