Customer of the Month
The January Customer of the Month is Lorita Horkheimer of Hazleton.

Lorita loves the taste, freshness and pure goodness of the food available at Hansen's Dairy stores. It reminds her of growing up on a farm in Prairie Du Chien, Wis.

"We had fresh milk, eggs, chickens and meat to eat with our fresh vegetables out of our garden that my mother would freeze and can. I helped weed the garden back in the days of good, fresh homegrown food," she said.

She appreciates fresh dairy products without additives and preservatives. Her favorite Hansen's product is the white cheese curds.

"We had milking cows, and I loved getting the fresh cheese curds off of the milk truck that were still warm and squeaky," she said. She likes to eat Hansen's curds fresh or toasted under the broiler.

"I love your Raspberry, Mint, and Heath ice creams, and the Big Sky Lemon Poppyseed Bread as well," she added.

Cow of the Month
The January Cow of the Month is a powerhouse milker.

Denmark is 5 years old and currently milks 130 pounds a day. She is nearing 100,000 pounds of milk in her lifetime! Herd manager Blake Hansen says it's hard to imagine where she keeps all that milk, because she has a fairly small udder.

Denmark also has very unique markings. Her eye patches have been salt-and-pepper-colored since birth, and they are getting more pronounced with age. Just another reason she stands out in the crowd!
Cooking with Hansen's
Happy New Year! Are you looking for a creamy comfort food that's also light and versatile? Try this Alfredo Soup! I like to use sausage for the added flavor, but you can use almost any meat, including leftover ham, turkey or roast. You could also add a variety of vegetables like green beans, carrots, cauliflower, or spaghetti squash. Enjoy!

Alfredo Soup
Prep/Cook Time: 20-30 min
Servings: 6-8
Ingredients
  • 2 pkgs Beeler’s Mild Italian Sausage*
  • 1 Tbsp Hansen’s Dairy Butter*
  • 1 medium onion*
  • 2 garlic cloves*
  • 6-8 cups Hansen’s Dairy milk*
  • 8 oz Westby Sour Cream*
  • 4 oz Farmer’s Cheese*
  • ½ - 1 cup Bongards Shredded Mozzarella Cheese*
  • 1 Tbsp each dried parsley, oregano and basil
  • Westby Parmesan Cheese to taste*

*Items that can be purchased at Hansen’s Dairy Stores
Directions
  • Cut sausage into 1/2-inch chunks.
  • Melt butter in large (4-5 quart) pot on stove over medium heat. Add cut sausage and cook until browned, stirring occasionally.
  • Dice onion and mince or finely chop garlic. When meat is browned, add onion and garlic, sautéing until tender.
  • Add milk, sour cream, parsley, oregano and basil. Turn heat down to medium low.
  • Cut up Farmer’s cheese into 1/2-inch chunks and add to soup.
  • Add Mozzarella cheese. Continue to cook until soup comes to a boil and cheese is melted, stirring occasionally.
  • Remove from heat, ladle into bowls and top with Parmesan.
