Thanksgiving is almost here and for those looking to cut carbs, this time of year can be a challenge. Well fear not, we have the perfect potato alternative: Celery Root!!! What it lacks in beauty, it makes up for in flavor and versatility! Celery root can be prepared just about any way potatoes can. Mash it, roast it, sauté it or even use it in a gratin! Raw celery root is also a common component in winter salads and slaws (check out Chef Maili Halme's recipe below!).  #Foodswap  this thanksgiving!

On this month's CROP TALK we would like to recognize one of our awesome foremen, Faustino Perez! Faustino, who has been with Babé Farms for over 18 years, supervises our root vegetable harvest crews. This requires the utmost attention to detail to ensure all products meet the quality specifications. When we caught up with Faustino, he was looking forward to the Thanksgiving holiday. As a tradition, he celebrates with a big barbecue with his extended family. Thank you for everything you do, Faustino!
Roast Radishes this Thanksgiving!
While radishes may be best known for being a decadent, edible garnish or a colorful salad topping, we would like to point out that they are delicious cooked! Roasted, braised, or sauteed radishes make an excellent side dish for your Thanksgiving feast!

Celery Root, Apple, and Fennel Salad

INGREDIENTS

  • 1 fennel bulb plus a few fronds for garnish
  • 1 celery root (celery can be substituted)
  • 1 Fuji or Braeburn apple
  • Squeeze of lemon to prevent the apples and vegetables from turning brown
  • 1 tablespoon minced parsley

For the Vinaigrette
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon Dijon or coarse ground mustard
  • 1 tablespoon sugar
  • ½ teaspoon Kosher salt
  • ¼ teaspoon freshly ground pepper
  • ½ cup olive oil

RECIPE PREPARATION

Chop the tops off the fennel but save the fronds for garnish at the end.

Chop the fennel into matchstick size pieces and place in a bowl. 

Peel the celery root and then cut into matchstick size pieces and place in the bowl. (If you have a hard time locating fresh celery root, then a cup of chopped celery can be substituted.)

Do not peel the apple because the apple peel is a pretty color in the salad. Instead, remove the seeds and slice the apple into very thin wedges and add it to the bowl. Squeeze lemon over all of the ingredients and toss together to prevent the apple from browning.

Make the vinaigrette: 
In a separate bowl combine the cider, mustard, sugar, salt and pepper. While whisking vigorously, slowly pour the olive oil into the cider mixture. Whisk until emulsified. Toss the vinaigrette with the apple, celery root and fennel. Garnish with chopped fresh parsley and fennel fronds.
