The Honey Natural is a blend of 50% Black Honey processed coffee and 50% natural processed coffee. Black honey process means that those coffee beans were processed with 100% of the mucilage still intact. Honey Natural "Red gold" Developed as an espresso base or single origin espresso and nick named Red gold for the velvety crema it produces Sonora honey natural is a blend of all the farms varietals.
The honey natural process is a dry mill blend of all their varietals and process. The coffees that go in this blend are processed more efficiently than others and create a very good cup.

The restaurant is gone, but their coffee lives on! Chatham Street Cafe was a small restaurant in Downtown Cary, and our very first commercial account. We made a great house blend for them, and when they closed, we thought about retiring or renaming the coffee. But by that time, it had become hugely popular, and it was a good way of remembering our friends there, too.
Cupping Notes:
Full bodied, with a big, earthy flavor profile. Hints of tobacco, dusky leather, and chocolate, with subtle spices and sweetness reminiscent of root beer. Smokey roast flavors in the finish.

As the subject line shows, we don't have any new coffee. Many people ask, "What's new?" The answer is "Nothing is new". The next coffee order will most likely be placed in mid to late fall. That brings me to my next point. If you are looking for a specific coffee, please order it through our
