Teacher Appreciation Week
Just a reminder that National Teacher Appreciation Week is May 7th - 11th! If you signed up to bring anything, you should receive a reminder email from sign-up.com. There will soon be a table in the lobby with thank you cards available for you to use. Feel free to write (or help your child write) special notes to the KKLC staff! 

Pictures
The first round of picture orders have arrived and are in your child's cubby! If you turned your order forms in for the second round of delivery, they should arrive with-in the next couple of weeks. 

Chef Change
Sadly, Miss Patti is no longer working with us. After some recent family events, she has decided to move up north with her son. We have some good leads on a new chef and will introduce him/her when the time comes.

School Age Day
 
We will be hosting the summer school age program starting on May 24th.  If your child will be joining us, please fill out the forms below and submit them to us as soon as possible. We are looking forward to a wonderful summer!

Enjoy a night out on February 10th. Children ages 3+ have the opportunity to watch a movie and use their artistic abilities to create a masterpiece of their choice! Free play activities will be set up for children under the age of 3 years. If you have any questions please ask the KKLC Leadership Team.

Loose Parts Donations -   

We, at Katie's Kids, would like to keep utilizing loose parts in our classrooms throughout the year.  Therefore, we are inviting parents and families that are interested to keep the supplies coming!  If you choose to donate you can drop the materials off at the front desk at any time!
  
Be sure to look through our center for how the loose parts are being used within the curriculum!

Getting Healthier...
At Katie's Kids Learning Center, we are committed to providing the best possible nutrition to you and your family.  We hope you enjoy the following recipe: 
 
Title : Fried Avocado Tacos 

Ingredients:
1/4 c. all-purpose flour
Kosher salt
pepper
2 large egg whites
1 c. panko breadcrumbs
2 tbsp. olive oil
2 medium firm but ripe avocados
1 lime, plus wedges for serving
4 tbsp. mayonnaise
1/2 small red cabbage (about 1 pound), cored and thinly sliced
2 scallions, thinly sliced
1 jalapeño, seeded and thinly sliced
1/2 c. fresh cilantro leaves, plus more for serving
8 small flour tortillas, warmed
Sour cream, for serving

  
Directions:
  1. Heat oven to 425°F and line a large rimmed baking sheet with nonstick foil.
  2. In a small bowl, whisk together the flour and ¼ teaspoon each salt and pepper. Lightly beat the egg whites in a second small bowl. In a third small bowl, combine the panko with the oil.
  3. Cut the avocados in half, remove the pit and peel. Cut each half into ½-inch-thick slices. Working with one slice at a time, coat avocado slices lightly in flour, then in the egg, letting any excess drip off and finally in the panko, pressing gently to help it adhere. Transfer to the prepared baking sheet and repeat with remaining avocado slices. Bake until golden brown, 20 to 25 minutes.
  4. Meanwhile, finely grate the lime zest into a large bowl, then squeeze in 2 tablespoon juice. Whisk in the mayonnaise and a pinch of salt. Add the cabbage, scallions, and jalapeño and toss to coat; fold in the cilantro. Fill the tortillas with the avocados and top with the cabbage slaw. Serve with extra cilantro, lime wedges and sour cream, if desired.
