May Recipe:
Rainbow Ginger Quinoa Salad
Make it for Mom!(you can do it!)
- 1 cup cooked quinoa
-1 1/2 cups shelled frozen edamame beans
-1 cup(total) frozen peas and carrots and corn
-1/2 cup yellow pepper diced
-1/2 cup red pepper diced
-1 cup red cabbage chopped
Combine above in a large bowl
Dressing(mix together the following:)
-2 tbsp. olive oil
-2 tbsp white wine (your choice!)
-3 tsp. fresh ground ginger
-1 tbsp. sesame seeds
salt and pepper to taste
Toss with ingredients in bowl.
Top with chopped walnut pieces.
