Following the Paleo diet doesn't mean no sweets! Dr. Rucha Patel has mastered a fresh, summer dessert to share. Join us for her tips and tricks on Paleo baking and try her delicious lemon cake with fresh berry sauce. No need to follow Paleo to attend--it's tasty for everyone!

Friday, August 3rd; 5:30-7pm Free; no registration Come by the Flatlander Classroom to celebrate our latest featured artists: Dee Noelle Savaria and Esther Seongbo Roh. Meet the artists, enjoy a little food & drink, and check our their fantastic pieces displayed at the co-op!
All Natural Women's Health Workshop Led by Terry Hickey & Anita Brown Saturday, August 4th; 3-5pm $5 owners / $10 non-owners Regional producer, Dayempur Herbals is partnering with Midwest Medical Thermography director, Anita Brown, to lead an all natural women's health workshop. Topics will include herbal remedies for menopause, pms, and breast health; lifestyle and diet choices to promote natural healing; and an introduction to thermography, an body screening process using infrared thermal imaging.
Herbal Wellness: DIY Wild Plantain Salve Led by Lexi Allred Saturday, August 11th; 2-4pm $7 owners / $12 non-owners Make a skin healing salve with a plant that grows in your own backyard! Our newest instructor, Lexi, is a clinical herbalist who will share the wide range of benefits of using Plantain externally and internally. Find out how to identify, harvest, and use this abundant medicinal herb.
Kids Cooking: Team Tomatillos Led by Mia Hanneken Tuesday, August 14th; 4-5pm FREE; registration required Team Tomatillos is a monthly kids cooking class for first & second graders. In this hour long class, we learn how to read recipes, use kitchen utensils safely, and make delicious snacks!
Red Herring Restaurant: Vegan American Comfort Food Led by Red Herring Vegetarian Restaurant Staff Thursday, August 16th 6-7:30pm $10 owners / $15 non-owners Join the chefs from The Red Herring for the final vegan cooking class of their summer series! Learn about cooking vegan, affordable cuisine inspired by food from around the world. The class will explore using local, seasonal ingredients to menu plan nutritious and blissfully delicious meals.
Thai Cuisine Led by May Springfield Saturday, August 18th; 3-5pm $10 owners / $15 non-owners Our monthly Thai Cuisine class is returning once again! May will share an authentic--and delicious--dish from Thailand with both meat and vegetarian options!

Food Preservation: Canning 101 Led by Anna Barnes Thursday, August 23rd; 6-8pm $7 owners / $12 non-owners Preserving fresh food through canning is a long standing tradition. In this hands-on workshop, we'll cover the basics of water bath and pressure canning equipment and techniques to help you can anything from jam and pickles to bean soup and salsa. Raw Vegan Series: Delicious Desserts Led by Evelyne Tardy, certified raw vegan chef Saturday, August 25th; 2-4pm $10 owners / $15 non-owners Join us for our second segment of the Raw Vegan Series! This month, Evelyne will continue to discuss the health benefits of a raw vegan diet while sharing her tips and tricks for satisfying that sweet tooth. This class is all about raw vegan desserts, including a lime & strawberry vegan cheesecake, chocolate pudding, and simple pie recipe. Not only will you leave with valuable information and recipes, you'll get to snack on samples of each dish.
Cooking Healthy on a Budget: Local Summer Salad Led by John McNally Thursday, August 30th; 6-7:30pm FREE; registration required Co-op kitchen staff, John, is leading his next Food For All class! Join us in the classroom to prepare a budget-friendly, fresh summer salad. John will highlight local vegetables to serve over a bed of protein-packed quinoa. As part of our Food For All program, the recipe will be cost efficient at under $2 per serving, made entirely of co-op foods.
