April Recipe~Chocolate Chip Kale Cookies (Kale is the new spinach!)
-1 cup spelt or whole wheat flour
-1/2 tsp. baking soda
-1/4 tsp. salt, 1/2 cup stevia (sweetner)
-1/2 tsp. coriander
-1/2 cup chocolate chips (mmm chocolate!)
-2 tbsp. milk
-2 tbsp. coconut oil
-1/4 tsp. vanilla
-1 cup raw kale (no stems) finely chopped
 Preheat oven to 325F
-Combine all dry ingredients (except Kale) in large bowl
-Stir in remaining ingredients including Kale, to form a dough
-Roll dough into balls and place on cookie sheet(lined with parchment paper)
-Bake 11 minutes(The cookies may look undercooked but firm upon cooling)
Enjoy    Kale is high in Vitamin A, C and K (building strong bones)
