The Backstory:
North Carolina, the Old North State, is a case study in diversity. From the mountains, to the Piedmont, to the coastal plains, it is a varied and wondrous place, with diversity in everything from climate and terrain, plant and animal life, urban and rural setting, and yes, a range of people, too. Yet despite all these differences, anywhere you stop in our fine state, there is a certain harmony that lets you know you are in North Carolina.
So it is with our Old North State Blend. We start with diverse inputs, roast them to different finishes, and blend them after roasting. The result is a blend with something for everyone, ranging from light, bright notes, through milk chocolate, and including some earth, leather and tobacco.



Cupping Notes:
Complex cup, with flavors ranging from sharp and citrusy, progressing through rounded fruits like white grape and pear, with a backdrop of earth, chocolate and pipe tobacco. Hints of white pepper spice.

The Backstory: 
Monsooned coffees are stored in special warehouses until the Monsoon season comes around, when the sides of the structure are opened and moist monsoon winds circulate around the coffee making it swell in size and take on a mellowed but aggressive, musty flavor. Arabica coffee is spread on the floor of the special monsooning warehouse in Mangalore, raked and turned around by hand to enable them to soak in moisture of the humid winds. The monsooning process takes around 12 to 16 months of duration, where in the beans swell to twice their original size and turn into pale golden color. Then there are additional hand-sortings to remove any coffee that did not expand properly, and the coffee is prepared for export.
 
Cupping Notes: 
Ultra-low acidity. Woody flavors, sandalwood, white oak. Slight earthiness.

About a month or so ago, we started a new program called "featured products".  Typically, we've had two products on sale.  The featured product is discounted even more than the sale product.  Why?  People get fixated on one coffee.  When we run out, there is no back up plan.  If you remember, coffee is a fresh food.  This time of year, we stock out of a lot of products, waiting for the new shipment to arrive at our importer's warehouses.  In the meantime, we are hoping that people are willing to try something new.  Hence, the extra discount on the featured product.  Disappointments will occur when a product is stocked out.  Please try some different products.  You never know what you might find!  :-)

Another thing that occurs is that people walk into the shop looking for a specific product on the shelf.  We may or may not have it.  Our selections are different every week.  We choose them based on what is ordered on our website.  If nobody orders what you're looking for, we won't have it on the shelf.  It is highly recommended to pre-order your preference.  That is the safest way to ensure you'll get what you want.

We are excited to start off the 10th season of  the Western Wake Farmers Market The season runs from April-November.  Hours are 8:00-12:00.  Starting in May, there will be a weekday afternoon market on Tuesdays from 3:00 pm - 6:00 pm.  Check out the new vendors and stop by to pick up some coffee or to just say "hi" to all of us at Muddy Dog!
