The season is short. You blink, and they're done.
Did you know? Lychees freeze wonderfully, and it's SO EASY... just pop them whole (peel and all) in the freezer. Put them in a heavy-duty zip bag. When ready to enjoy, take a few out. Don't let them thaw out completely - just enough to pop off the skin. Enjoy them like frozen popsicle bites. On a super hot day, they're little food-gasms! They keep well for months. Buy a LOT, because they go really fast..count on approximately 20 lychees per lb.
