May is asparagus season in Michigan  (& National Asparagus Month)
From the Desk of Susan Cutshaw M.S.

Asparagus tidbits:
  • Asparagus comes from the Greek word for shoot or sprout and is believed to originate in the Mediterranean region some 2000 years ago.
  • Nutritionally, asparagus is loaded with folic acid, vitamins A, B6, C, thiamin, and potassium. Five spears are about 20 calories, 3 grams of fiber and zero fat.
  • Asparagus should have a compact and pointed tip.
  • Due to its perishable nature, chill quickly (unwashed) and use within one to two days.
  • It can be eaten raw or with minimal cooking.
  • Choose spears or stalks that are straight and firm.
  • When cooked, thicker stalks are more tender than thin stalks.
  Michigan asparagus:
  • Our season starts late April to early May (maybe not this year).
  • Michigan asparagus is considered a "clean 15" food due to its short growing season and low level of pesticide usage.
  • In ideal conditions, asparagus can grow ½ inch per hour and can be picked 2 times per day
  • 120 Michigan families use 9,500 acres to harvest approximately 20 million pounds of asparagus!
  • It takes 4 years to develop an asparagus field and can last up to 20 years. It can be picked 25 - 30 times during the season.
  • 40 % is sold fresh in supermarkets, restaurants, farmers markets, and roadside stands.
  • Michigan is ranked # 2 in the country for asparagus production outdone only by California.
