The Backstory: 
They've done it again!  Inn keepers Colin and Deanna Crossman have opened the sister hotel to the King's Daughters Inn.  Located in downtown Cary, NC, The Mayton Inn follows the same philosophy it used while building the King's Daughters Inn.

Cupping Notes:
Full bodied without being heavy, this is a decidedly clean cup. Predominantly rounded with light fruit notes of white grape. Hints of dark chocolate. Slight glazed almond nuance as the cup cools.

The Backstory: 
Coffee has been grown in Guatemala since the 1850's, and Antigua is one of the places it began. And of all the fincas in Antigua, arguably none is more storied than Bella Vista, a medium sized plantation that's been owned by the same family since 1908. Luis Pedro Zelaya Zemora is the fourth generation to manage this land. Jim met Luis on the farm, and was impressed by the special combination of his reverence for the land and the history of the plantation, and his drive for innovation.
Bella Carmona is actually the neighboring farm to Bella Vista (also owned and operated by Luis and family), and utilizes the mill at Bella Vista. It is one of the most legendary "branded" coffee of Antigua.

Jim and Debbie are back from New Orleans.  Many of you have been following our growing daughters, who started working with us when they were in 6th grade.  Well, our daughters graduated from Tulane University in New Orleans last Saturday.  To commemorate their graduation, we'd like to reintroduce the classic New Orleans style coffee.  The most famous place you'll find it is at Cafe Du Monde.  Who Dat! is our own version of chicory coffee, using the same chicory from New Orleans.  This is only sold in pre-ground form; there is no whole bean version available because we must grind it to properly blend it with the chicory.

For those wondering about chicory, it became popular as a coffee substitute during war time, and in New Orleans that popularity has never diminished. Chicory itself is the root of Belgian Endive (think lettuce), chopped, roasted and ground. In its usable form it looks like ground coffee, but it is less aromatic. In the cup it adds a distinctive spiciness, like pepper.
The traditional preparation is in a French press. To the brewed coffee you add an equal amount of hot, scalded even, milk. This is Cafe Au Lait, of coffee with milk. Sugar is good in it, too. I don't recommend it black unless you really like strong flavors.
