Expressing Gratitude
With a week of poor air quality upon us, and the knowledge that many in our beautiful state are suffering greatly, stress and fatigue are completely predictable byproducts that we are all currently processing. There are numerous studies that point to the effectiveness of giving thanks for combating negativity and improving many quality of life factors. With that spirit in mind, we would like to take a moment to let you know how much you are appreciated, and how important your contribution is to this exceptional district. To all of you, thank you, from all of us.

The Great American Smokeout®
Quitting smoking isn’t easy. It takes time. And a plan. You don’t have to stop smoking in one day. Start with day one. We are pleased to announce the winner of the enormously successful, 1st annual SLUSD Healthy Halloween Challenge! Before we get to all the excitement, we wanted to take a moment to thank everyone who participated by sending in their healthy Halloween treats in their classrooms and offices. The creativity and commitment to the challenge was truly impressive. Your Wellness Warriors were treated to a glorious Halloween day with so many smiles as our emails filled with happy faces noshing on nourishing nibbles. We have included a few of the pics here so we can all start to plan for next year!

Had it been up to the Wellness Committee, everyone who shared would have received a gift card, because there was so many healthy treats being shared throughout the district in various ways. Luckily the winner was selected by a random drawing.

Recipe of the Month
Cranberry Salad
Ingredients
  • 2 cups fresh or frozen cranberries
  • 1 cup water
  • 1 cup Equal Spoonful or Granulated*
  • 1 four-serving size cranberry or cherry sugar-free gelatin
  • 1 cup boiling water
  • 1 cup diced celery
  • 1 can (7-1/4 ounces) crushed pineapple in juice, undrained
  • 1/2 cup chopped walnuts
Directions
  1. Bring cranberries and water to a boil. Remove from heat when cranberries have popped open. Stir in Equal. Set aside to cool.
  2. Dissolve gelatin in 1 cup boiling water. Add cranberry sauce; mix thoroughly. Add celery, pineapple with juice and walnuts. Pour into a mold or bowl. Refrigerate several hours or overnight until firm.
Notes:
A great salad for the holidays, combining fresh or frozen cranberries, pineapple and chopped nuts in a sugar-free gelatin base. Plus, it has 58% fewer calories than the traditional recipe.
Recipe Yield: Serves: 8
