Anyone who was Chef de Cuisine at Languedoc Bistro at age 22 has my respect. Fast forward a number of years and add in a business degree from Babson College, whose MBA program is ranked as one of the best by US News & World Report and Bloomberg. Now, imagine said Chef is able to open a new restaurant during Year One of getting this MBA. 

Hats off to Patrick Ridge of Island Kitchen. Not only is he running Island Kitchen, but he is doing it well.

In 2013, Patrick purchased The Hen House on Chin's Way and transformed it into Island Kitchen, opening on May 24th, 2013. With a simple design makeover, he opened the 47-seat restaurant (including 7 seats at the bar) without major renovations. If you've ever been to The Hen House, you'll recognize the feel, but the food is totally different. Patrick is the Executive Chef, usually behind the line, and the restaurant offers breakfast, lunch, and dinner year-round. He brings his significant culinary experience to his new endeavor, and when people discover it, they tend to become regulars. Categorizing the food as "Simple American", Patrick explains, "we try to get as many local ingredients and do as little as possible to them."

It's important to Patrick to keep the prices reasonable, and he has a loyal following of value conscious people who seek out quality food. Breakfast runs about $8 - $15 (all in); lunch ranges from $12 - $18, and a fine dinner can be had for $20 - $40. "A party of four can come here and eat great food for $145 instead of going down town for $300". Island Kitchen has a substantial wine list, friendly service, and a bright and cheery environment.

Recently I joined a friend for breakfast at the counter. I overheard an off-island couple as they eagerly entered the restaurant talking about what they would have "this time". As they waited for a table, I introduced myself to Sandy and Steve, and we exchanged pleasantries about the food. On their way out, they came over to report, "I always get the Smoked Salmon with the Spinach Eggs Benedict" says Steve. I asked "why do they keep coming back?" Sandy summed it up, "It feels like you're in someone's kitchen, and they're making it just for you. They're so friendly, and the food is so healthy. There's just a great energy here."

Patrick, when did you first know you wanted to be a Chef?
"I've been cooking since I was about 14. I always knew I wanted to have my own restaurant at some point."

What brought you to Nantucket?
"I was cooking at Aquitaine Bistro in Boston, and I wanted to get out of city. I thought I might like to be a bigger fish in a smaller pond and applied for a job at Le Languedoc. I was hired to be the Sous Chef when I was 21 and became the Chef de Cuisine at 22."

What steps did you take to get to where you are today?
"I've held every position in a restaurant including dishwasher, prep cook, line cook, sous chef, and chef. I attended the Culinary Institute of America and had multiple apprenticeships in France (two in Burgundy and one in Paris) and also spent a year cooking throughout Italy. While I was Sous Chef and Chef at Le Languedoc, I left Nantucket every winter to study with a different chef. I have had lots of hands-on training from some very qualified people."

After six years in the kitchen at Le Languedoc, Patrick opened Pronto, which was a short-lived (but much appreciated) venture with the team at Le Languedoc. Pronto featured gourmet food to go. Patrick feels like that experience sharpened his business acumen and helped him develop a clientele through the catering and private dinner parties. It also led him to a private chef opportunity, a position he kept for six years. As a private chef, he was constantly traveling with and cooking for this family. He spent a full year in Italy where he cooked throughout the country and studied food and wine.

Patrick views Alan Cunha, Neil Grennan, and Ed Grennan, the three partners at Le Languedoc, as mentors and meets or speaks with them at least twice a week. "All three partners have been incredible to me through my entire professional life. I can't say enough about how much they have helped me for the 15 years I have known them. When I need a power router because the sewage line is broken, Eddie stops his day and comes over to help me. They are salt of the earth, great people. They lend me their tools and help me with staff. It is so beyond just advice they give me. I couldn't operate this without their help."

Having a great love for travel and fine dining, I asked Patrick if he had any exceptional meals that stood out while in Europe? Since he had apprenticed at wonderful restaurants that included Maison Lameloise, which had received Michelin's highest ranking of Three Stars, the culinary bar was set very high. I expected he might not be able to select just one. Without missing a beat, Patrick chuckled and started speaking.

"I had a customer on Nantucket who used to come in to Le Languedoc and tell me about the most amazing chicken he had eaten in Burgundy. "The Chicken" was cooked in a pig's bladder and stuffed with foie gras and truffles. He knew I apprenticed in France during the winters, and urged me to order it. He was surprised when I returned from France not having tried it. But it cost 1,500 Euros. Finally, I had to be honest and tell him that I could never afford to buy The Chicken as it represented a significant portion of my salary in my early 20s.

"I guess he thought that The Chicken would be an extraordinary experience for me. At some point, he stopped by the restaurant and pulled me aside at the end of the evening. He was so insistent that I try The Chicken, he gave me 1,500 Euros, with the stipulation that I call him as soon as I have it and tell him about it. I happily pocketed the Euros. A few weeks later, I arrived in Paris for a few days before my next apprentice started in Burgundy. In my early 20s, the 1,500 Euros was burning a hole in my pocket, and my friend and I went right to Pigalle, an action-packed district of Paris (home to the Moulin Rouge) before traveling south to Beaune, Burgundy. Keep in mind, we were leaving Nantucket in February, and this area was loaded with people spilling in and out of nightclubs, strip clubs, drag queens on motorcycles, and more action than we had seen in months. We had a blast, and within three days, the 1,500 Euros was gone.

"Once my apprenticeship started, Alan Cunha continued to check in via telephone every week, and asked me about The Chicken. At this point, I felt forced to have The Chicken but it was just so much dough to spend on one meal. I was a little tired of disappointing my customer by not having ordered it. I didn't know how I would repay him, but knew I would figure it out. I told Alan, "I don't have the money for The Chicken anymore. Alan responded with, "this guy is calling me and asking about your experience with The Chicken. You're supposed to pick me up in Dijon in 10 days. I don't care how you do it, but if you don't have The Chicken by the time we meet, you don't have a job."

"So my friend Jason and I set off for the La Cote d'Or, another Michelin Three-Star restaurant, in Saulieu. I'm sure we looked like we just stepped out of the prom in our wrinkled corduroys, pink shirts and blue blazers. We were definitely the youngest customers in the restaurant, as well as the only non-Asians. Everyone else was eating the 200 Euro prix fixe lunch with flights of wine. We placed our order for a bottle of Chassagne Montrachet and The Chicken for two. The Maitre'd rushed over to our table and explained to me, 'Sir, The Chicken requires a two-hour preparation and usually people call ahead."

"Even after we explained the only thing we wanted was the chicken, he pressed further, 'wouldn't you like to enjoy something else while you wait?' After much back and forth, I just explained, 'I am under strict instructions to order The Chicken. I'm doing an apprenticeship at the neighboring Three-Star down the road. I have just enough money to pay for the meal, a bottle of wine, and a tip and not a penny more. We are happy to wait the two hours but we won't be ordering anything else.' So the Maitre'd apologized profusely and immediately started sending out flights of wine and different courses. We were served the best chicken in the world. It could not have been better. At the end, the kitchen staff came out, and we meet everyone but Chef Bernard Loiseau. We all retired to the lawn for cigars and had the most fabulous time.

"On the way home to Beaune, I called my customer and raved about The Chicken, telling him 'you were right. It was the best chicken I've ever had.' We drove home to Beaune, and promptly fell asleep. When we woke up, we headed to Pickwick's, the dive bar where the winemakers hang out. We ran into our friend Cecile, who was the Sommelier at the Chanticleer. As we were talking at the bar, she received a phone call and quickly got up to leave. She explained that one of her parents' friends, the Chef at La Cote d'Or, had just killed himself.

"I couldn't resist: I placed another phone call to my customer. Without mincing words, I told him, "Not only did we have The Chicken tonight, but it was the final chicken (and probably the final meal) Chef Loiseau ever made." Patrick mused, "the really interesting thing about La Cote d'Or is that Michelin stars are usually based upon the chef's cooking. Chef Loiseau's wife took over, promoted the Sous Chef, and managed to retain the Third Star. This is unheard of in the Michelin rating world and very impressive."

What do you find difficult about being on Nantucket?
"The hardest part of living on Nantucket and working in the food industry are the high financial barriers to entry. As a result, we don't have really great, inexpensive eating on the island due to the high expenses of doing business."

How many classes have you taken at Babson Business School since opening Island Kitchen?
"I'm done! For two years, every three weeks, I spent two days at Babson for 12 straight hours. I took about 4 - 6 hours of online classes a week." I couldn't help myself. I asked "Patrick, when do you sleep?" He laughed and said, "It's true; I tend to stay busy!"

What are YOUR favorite dishes at Island Kitchen?
"In the morning, my favorite dish is the Finnan Haddie, which is a smoked haddock with a light cream sauce served over sourdough crostini.

"My favorite dinner entr�e is the Weiner Schnitzel, which I serve with potatoes, lemon and garlic. We've had some awesome veal lately. It is a nice and simple dish."

What are the most popular dishes at the restaurant?
Patrick explained that the Turkey Hash is easily the most popular for breakfast. For lunch, the Cheeseburger takes the top place, with Tempura Avocado as a close second. For dinner, "hands down, whenever we have the fluke or the flounder, it's always the most popular." Patrick prepares the flounder and the fluke in the same manner, with a simple Sauce Champignons - a butter, lemon, cream and roasted mushroom sauce in a chicken broth reduction. "Even in winter, it's local out of Rhode Island. It's a very simple preparation with fresh, local ingredients."

What was the first meal you cooked at Island Kitchen?
"Eggs over easy."

How many meals have you cooked since opening?
"Well, in the 7 months of 2013, 29,000 people paid for meals."

Average minutes wait for breakfast in the summer?
"In the summer, it's about 15. On the weekend, 5 - 10 minutes."

How many times people have said, "I didn't know you served dinner!"
"About 6,000!"

Patrick certainly has many balls in the air. Like a skilled juggler, there's a timing to the rhythm of addition and subtraction, so nothing gets dropped. Now that he has completed graduate school, he's looking to put some of that found time into expanding, all while keeping Island Kitchen functioning at the same consistent level of quality. I'm struck by how Patrick takes on only what he knows he can handle. He's skilled at his craft, analytical, and measured.

*"Umami" is something the Japanese recognize as the 5th flavor, in addition to sweet, salty, sour, and bitter. A nuanced word, one could define it as the "je ne sais quoi" that deepens flavor, the experience, and imparts satisfaction and sensory delight. To me, it's "that which makes Nantucket special".

However upon encountering the icy proprietress, Madame Mallory, the Kadam family realise they may have bitten off more than they can chew. Outraged by the new arrivals, Madame Mallory is determined to have their business shut down.

Our founding fathers warned us that, although the freedoms they gave us were hard fought, they could very easily be lost. America stands at a crossroads, and the way we understand our past will determine our future. The movie takes 21st-century Americans into the future by first visiting our past.

Theatre Workshop of Nantucket's High Fashion on Low Beach took place on Friday, August 15, 2014, with an evening of Michael Kors fashion, and a full runway fashion show with top fashion models.
