Garden Enhanced Nutrition Education


 
How do you get kids to eat the fruit and veggies they've grown in the garden? Need ideas for recipes, age appropriate cooking activities, or food related books?
 
You can use your existing school garden to enhance nutrition education for children and youth and promote the consumption of fruits and vegetables. Come to our GENE class to learn how! Activities are drawn from curricula for grades K-7, and are all available for free online. If you've ever wondered what is the right age to introduce knife skills, or if it's safe to use compost in your garden, or what are the best crops to grow to encourage tasting right out the garden, then this is the workshop for you!

What We're Up To:
March and April
  
In March, third grade students from National School District visited the garden to learn about the Three Sisters: corn, beans, and squash. We hosted a Kids in the Kitchen event, graduated 15 adults from our 7-week Cooking for Salud! class, rebuilt our succulent garden, attended the National City Mariachi Festival and the Master Gardeners Spring Seminar, and started our spring yoga class!

Congratulations to the graduates of the Late Winter Cooking for Salud! session!

Recipe of the Week

Cowboy Caviar

Serves 4

 

Ingredients

� pint grape tomatoes, sliced in half
1 cup black-eyed peas
1 cup black beans
2 ears of corn, kernels removed from cob
1 red bell pepper, diced
� cup red onion, diced
1 jalape�o, seeds removed, diced
avocado slices, as a garnish
handful of cilantro, chopped
1 Tablespoon lime zest
� cup fresh lime juice
1/8 cup olive oil
salt and pepper, to taste
pinch of cayenne pepper
pinch of cumin

 

Directions
1. To make dressing, add cilantro, lime zest, lime juice, olive oil, cumin, cayenne, salt and pepper to a jar and seal lid. Shake well, until emulsified.
2. Combine tomatoes, beans, black-eyed peas, corn, peppers, onion, and jalape�os in a bowl. Add dressing, as needed, and mix with ingredients.

3. Top with slices of avocado, if desired. You can serve the Cowboy Caviar as is or with tortilla chips! Enjoy!
