Breakfast Sandwiches

 

Ask and you shall receive! In response to customer requests, Faubourg is excited to add two savoury breakfast sandwiches to our morning menu: Ham & Swiss Cheese and Mushroom & Swiss Cheese, both built on fresh-baked focaccia and filled with nutritious scrambled eggs.

 

To ensure the best quality of our breakfast sandwiches, our bread and scrambled eggs are made in house every morning. Offer available at all three locations.

Featured Interview

Today, our Pastry Chef Ricardo Rosas shares with us the story of the Faubourg Fresh Fruit Charlotte.

 

What is a Charlotte?

RR: The Charlotte is a timeless French dessert. Always soft and creamy, it is made by lining a mould with sponge cake ladyfingers which is then filled with a fruit pur�e or custard. Over the years, the Charlotte has offered infinite varieties. Faubourg's version consists of layers of vanilla Bavarian cream in between a layer of lemon cr�me, genoise sponge cake and berry gele, all enveloped by a ring of homemade ladyfingers. 

 

What makes Faubourg Fresh Fruit Charlotte special?

RR: At Faubourg, we are proud to offer entirely handcrafted products, even the ladyfingers. The challenging part is piping even, consistent ladyfingers, which is the true secret to building a solid foundation and creating the esthetic appeal that Faubourg's known for.

 

What is the origin of the Charlotte?

RR: The original Charlotte was named for the wife of King George III of England and consisted of an apple compote baked in a round mould lined with toast slices. A few decades later, French chef Antoine Car�me adopted the concept after a kitchen disaster: his gelatin supply was not sufficient for his Bavarian cream, so he steadied the sides of his sagging dessert with ladyfingers and created the modern Charlotte!
