ONO WAHOO

Ono Wahoo flesh is whiter, flakier, and has a more delicate texture than the meat of other fast-swimming, pelagic species. Although wahoo may make oceanic migrations as far as those of tuna and marlin, it contains less of the strong-tasting "blood meat" muscle that the latter species use for long-distance swimming. Ono is excellent sauteed, broiled, grilled, poached, baked, steamed.
GOLDEN TILEFISH
Wild, Cut from 3-6lb. whole fish, USA

 

Although Tilefish look their best when they are still swimming, it is their flavor we're really going after, not their beautiful rainbow colors. Mild tasting but with an almost lobster-like flavor, Tilefish is a rather unique option. The meat cooks up nice and white with a moist, firm texture.  Tilefish can be sauteed, poached, broiled, or baked. Keep in mind that it is somewhat of a lean fish. 

FRESH SUN SHRIMP
Product of Florida, Head on, 16-20 ct.

 

Fresh from the waters of Florida comes our 16-20 ct. Sun Shrimp.  At harvest, the shrimp are immediately dipped in an ice slurry that will quickly preserve them. They arrive at their packing plant within minutes where they are washed, graded and packed so they can be shipped directly to us within a couple hours after harvest. Sun Shrimp have a firm, crispy texture and exhibit no odor whatsoever. The shrimp are all natural with no chemicals, antibiotics or preservatives used. 

LOCAL LAKE ERIE FAVORITES
Walleye and Yellow Perch Fillets

 

We have been seeing consistent and quality product in from Lake Erie, with fresh shipments of Large and Jumbo Walleye as well as Yellow Perch arriving a couple times a week. We are just a couple weeks away from the true lake season opener. 

 

Yellow Perch are one of the finest flavored of all pan fish. The white, flaky meat is firm, white, and sweet-tasting. Cooking methods include sauteed, broiled, grilled, baked and steamed.
 

 

We just received a fresh shipment of  Whole Jumbo and Medium Walleye.  Expect a clean white meat with a small flake and excellent, sweet flavor. Walleye is adaptable to just about any cooking method, including sauteed, broiled, baked, pan fried & smoked.

SKATE CHEEKS
Product of the US

Like sharks, skates have no bones, only cartilage providing only two edible portions, their wings and their cheeks. Skate cheeks are cut from the area right near the skate's mouth, so they technically are in fact cheeks. The fisherman will use a hook to grab the skate and then as the frame hangs down, they will use a knife to cut out the cheek. Skate Cheeks are similar in size and shape to a scallop, but taste more like a white flaky fish. The meat cooks up to an off white with a moist, firm and delicate texture.

-BAP Farmed Shrimp is a "Good Alternative" According to the Monterey Bay Aquarium Seafood Watch-
  
After an extensive evaluation of BAP farm standards for finfish and crustaceans conducted by the Seafood Watch staff, two star BAP Shrimp will now be considered equivalent to a yellow, "Good Alternative rating from the Monterey Bay. This rating process began more than two years ago when the Global Aquaculture Alliance strengthened their requirements for habitat mitigation, water discharge and escapes. This is excellent news for the seafood industry as this now addresses environmental and social responsibility, food safety, animal welfare and traceability.
