The first all-ginger beer brewery in the country opened on August 26 in Alabaster, but don't worry if you haven't yet made it down to Interstellar Ginger Beer and Exploration Co.: they'll be bringing several of their finest beers to this year's Pro Hops Vino!

Co-founder Shane Kelly said that he first became interested in brewing beer while studying yeast fermentation as a graduate student at the University of Alabama at Birmingham. "I'd grow yeast every day in my lab and so I thought, 'Why not make beer? I drink beer, so why not make it?'" he recalled. After he graduated, Kelly began experimenting with different ingredients, adding new herbs and fruits to his brews and branching out into brewing kombucha. He began to specialize in making ginger beer, and realized he had found his calling.

"At some point I got committed to making ginger beer commercially. I had a good product, I was making good stuff, and I figured that's what I wanted to do with my life," he said.

In addition to being the only brewery in the country to use only ginger instead of hops or barley, Interstellar is unlike most other breweries in that they have made most of their brewing equipment by hand. "We built a ginger grinder from a stainless steel InSinkErator, which is actually an under-sink disposal," Kelly explained. "We modified it to attach to a continuous duty half-horsepower motor. And that thing just hauls; it crushes ginger for breakfast."

Laughing, he added, "That's actually probably my favorite part. Recipe creation comes second to MacGyvering new fermentation devices."
