Lemonade for Grown-ups!

July was a very exciting month with both the releasing our 2016 Vidal Blanc and our Annual Ruby Blending Party. 

The Vidal Blanc has been a very popular white wine during the summer months. It has a cool and refreshing taste and is perfect for a sunny day. Served chilled, we call it the "lemonade for grownups". We have it on ice everyday, please come in for a taste or a glass, and don't forget to enjoy our view!!!

For you red wine lovers...on July 9 th our wine club members had a wonderful experience tasting though the blending trials of our 2016 Ruby and sampling some Vintage 2010 from our library as well. It was a wonderful demonstration tasting through the individual components that make up the blend. The Tannat, Fer Servadou, and Petit Verdot all contribute something special to the wine, not only offering up their own flavors but, when combined, create new flavors all together not seen before. Blending is an aspect that makes winemaking so exciting and the wine so unique. The Hillsborough Ruby is truly a wine that you will not find anywhere else. Fruity, earthy, and complex with great ageability and food pairing potential, the Hillsborough Ruby belongs in every cellar!

The 2014 Ruby will be up for release on September 2 nd during our Annual Release party that everyone has been eagerly waiting for. In addition to the Ruby the long awaited 2014 Cabernet Sauvignon, Petit Verdot, and Bloodstone will also be available! 

Members and guests will have an opportunity to preview and sample the 2014 reds before release during our Cellar Tour on Sunday August 13th. This special viewing will be hosted in the winery, where we will sample all of our red wines from 2014 thru 2016. It will be an amazing experience that you will not want to miss, I hope that you will join us, I look forward to seeing you there.

Cellar Tour 
Sunday, August 13th | 1:00 pm

Preview the 2014 Reds up for release this September and taste the Cab Sauvignon, Bloodstone, Petit Verdot, Ruby and Onyx from 2014 - 2016 with the Winemaker Kerem Baki in the winery. Discuss blending techniques and how the different vintages compare to one another. The 2014 reds will be available for purchase. 

Release Party
Saturday, September 2nd | 6:30 - 8:30pm

Spend the evening with our Winemaker, Kerem Baki, for a special tasting of our 2014 red wines on the front patio overlooking the vineyard. A 3oz sample of each wine will be provided along with some light fare. The 2014 Cabernet Sauvignon, Bloodstone, Petit Verdot and Ruby will be showcased and available for purchase.
Vineyard Tour
Sunday, September 10th | 1:00pm

Enjoy a relaxing walking tour through the vineyards of Hillsborough. Sample the different grape varieties off the vines while your guide Kerem Baki discusses his vineyard practices & philosophy. You will then be escorted to the winery for a winemakers tasting of the estate wines to compare with your grape tasting.

Vidal Blanc | 100% Vidal Blanc

The Vidal Blanc is a white hybrid grape variety originating from western France. This winter-hardy grape is commonly used in Canadian wine regions for the production of ice wine.

A pleasantly tart & refreshingly crisp white wine with notes of citrus, the "Lemonade for Grown-ups!" This is the perfect wine for those dog days of Summer, picnics and poolside cookouts.

Veraison | Coloring of the Grapes


One of the most important moments in a  grapevine's annual lifecycle is the onset of ripening, when the grapes turn from green to red and naturally begin to sweeten. The French call this process veraison ("verr-ray-zohn"). Veraison also occurs in white grapes, but without the color changes-white grapes simply become more translucent. Veraison starts in late July in the Northern Hemisphere and in late January in the Southern Hemisphere.

Veraison is very much the tipping point in a grapevine's annual lifecycle. It's when the vine alters it's focus from energy creation (through photosynthesis) to energy consumption where it concentrates its energy into making sweet grapes. The changing color  (anthocyanin) and development of other polyphenols act as protectors to the grapes from sun, wind and other stresses. Following the onset of veraison, the ripening process then takes anywhere from 30-70 days for the grapes to become fully ready to make wine!
