WHOLE ATLANTIC PORGIES (SCUP)

For additional whole fish variety we  just   received  Porgies (Scup)  from the Atlantic. We believe that porgies are truly an underrated species and are an excellent alternative to just about any popular seafood fare.  W hether baked, fried, broiled, grilled, sauteed or poached, porgies offer superior sweet flavor, a white tender meat and an excellent large flake. The flavor profile is very similar to snapper and grouper, and is usually best when left whole, however porgies can be filleted as well. Because of the small bones, it is often recommended for the fish to be cooked whole which allows for the bones to soften and the meat to slide off more easily. (The edible skin adds a nice, crispy touch to any dish too!) The sweet flavor of the meat allows for a wide variety of recipes and complement most side dishes very well.

Summer Flounder is highly valued for its lean, white meat and light, delicate, sweet flavor. Known as the chameleons of the sea for their ability to blend in with the sea floor, this once over fished specie has now become a part of a sustainable, well managed fishery with catch quotas and fishing requirements. We recommend using wine, sauce or moist vegetables to keep the fish from drying out and can be baked, broiled, fried or sautéed. However, Fluke has a delicate taste, so don't over power it with strong flavors.
FANCY HALIBUT

Pacific Halibut is known as an elegant, premium whitefish. The fishery is responsibly managed and strictly regulated through seasonal harvest and exclusive use of longline gear. Wild harvested halibut has wonderfully firm but flaky white flesh and a mild yet rich flavor. Because they feed on crabs, shrimp and other fish, they build a complex flavor profile and excellent muscle tone. Halibut tastes great deep fried, grilled, roasted, sauteed or poached, however the firm meat makes this fish suitable for all types of cooking methods.
