Butter Chicken Salad
with Erin Detwiler

This month's salad has a highly enticing name.  The ingredients include:
Butter Lettuce (but no actual butter) 
Pulled Chicken Breast 
Cherry Tomatoes 
Carrots 
Cucumbers 
Avocado 
Brown Rice 
French Vinaigrette  
Salt and Pepper

The excitement in this month's recipe is, first, how to save time with pulled meat (in this case chicken). And second, how to select and prepare brown rice instead of white rice. 

Make your life easier with pulled meat such as chicken.  Make it in advance and keep it in the fridge to use in many various ways all week - tacos, salads, stir fries, breakfast quiches, casseroles.
Rinse chicken, pat dry, and salt both sides.  Cook the chicken breast in a cast iron skillet in coconut oil or ghee for 4 minutes per side on medium high and then cover for  ~ten more minutes on medium low  until cooked through.  Cool.  
Shred the meat with Meat Claws (they look a lot like Wolverine's hands).    

This month I discovered that many people do not realize that the rice they buy  (instant rice and/or  white rice) is heavily processed and missing most of its fiber and nutrients.  The book Blue Zones found that long lived people eat whole grain foods.  Here's a nutrition comparison of white versus brown rice from SparkPeople*.  How do you know your rice is processed?  Brown rice takes nearly an hour to cook. Watch out, sometimes it's called brown rice but if it still just takes 20 minutes or less it's really no different than white rice.

Kelly just completed our 200 hour Yoga Alliance FLY! Vinyansa Teacher Training.  Her dream is to one day create a foundation to help those in need of healing, through the simple avenue of selling t-shirts.  She walked into her first yoga class at a gym for a work out.  Those who practice yoga understand it is so much more.  The Sanskrit translation, based on Hindu tradition, is "to add", "to join", "to unite".  She hopes we can unite in moments of happiness, and in moments of hardship, and be lights for one another.  She feels forever blessed for all she has learned since she began her yoga teacher training in October.
Her story is a call out to you - Kelly is searching for Happiness ambassadors.  Tell your friends, family, sell a shirt, relay the message to someone who needs healing, support and a positive affirmation to start his or her day.  Let's outshine the violence, anger, and pain in this world and shed a ray of light into the darkness.
