It's time for Week 12! We are getting into the peak of the growing season in NE Ohio-- your bags are busting with tomatoes of all different kinds, eggplant, onions, zucchini and much more. Keep reading to see what's in store!

It's the BLT bag! All the Omnivore shares will get a pound of our nitrate-free bacon. If you're not going to cook it all up at once but prefer to use a strip or two for cooking, check out this awesome tip:
The Kitchn's A Better Way to Freeze Bacon. Want to make a BLT but not a fan of mayo? Try slathering some crusty bread with goat's cheese instead (
check out our online store-- we have 4 different types of chèvre in stock.) Top with thick slices of salted tomatoes,
oven-roasted bacon, crunchy lettuce and you're good to go!
And in the rest of the bag, you'll see lettuce, slicing tomatoes, a bulb of kohlrabi, two green peppers, three Hot Hungarian Peppers, a pair of zucchini (or other summer squash), 5 or 6 apples (a combination of
Zestar and Early Summer varieties-- both can be enjoyed fresh or cooked into sauce or a crisp). We're s
till waiting to hear about the harvest from the orchards-- each stop will get either peaches or cantaloupe (not a choice between the two), so you'll get a little surprise once you arrive to get your bag!
In lieu of the bacon, the Vegetarians and Vegans will get some Roma tomatoes, an onion and four ears of sweet corn. The Large Shares will have a big upgrade: corn, cherry tomatoes, carrots, eggplant, basil and chorizo (Large Veggies-- you're looking at a pint of blueberries and your choice of cheese instead of the chorizo and double corn.)
Great trick to use up lots of tomatoes:
slow roast them. Once you've done that, you can whip it up into a rich tomato sauce for pasta, or pour into labeled containers for the freezer.

Parker's Rules for using up your bag:
Parker has some helpful hints for using up your share, and as the bags get bigger and bigger you should make a plan.
- Use the most perishable items first.
- Use the items you're the least familiar with second.
- Use the items you're the most familiar with last.
If you follow these three rules in order, you should have a good shot at using everything up at peak freshness, not having anything wilt in the back of the fridge because you're scared of it, and you still have your go-to, easy to prepare items in your back pocket for the end of the week.
Another rule: don't just put your whole bag in your fridge! Once you get home, take everything out of your bag and put it out on your table or countertop. Make sure you know what it all is (you can look at our weekly picture posts online, updated every Wednesday around midday), and give it all a good clean.
Separate bulbs from leaves (beets, onions, carrots, radishes, etc.) and store separately. Most items do perfectly well for a few days rinsed, dried, and stored in your fridge with a paper towel in a loose plastic bag. Tomatoes shouldn't be refrigerated (unless you've only used half.)
Another tip from Cat-- get a small magnetic whiteboard for your fridge and list all the raw ingredients you have currently in stock. This way when you're planning your meals, you don't have to hunt through the cold fridge. Every time you use something up, wipe it off the list.
If you didn't use something soon enough-- maybe some peaches starting to get soft, or you see fruit flies by the tomatoes-- the best bet is to blanch and freeze, or cook into sauce. Click here to read more of our best preservation tips.
Credits expire at the end of the season.
Vacation credits, Full Access credits, purchased credits and any other type of credit you can imagine is for one season and one season only. All credits expire at the end of the season and cannot be moved onto the next share (i.e. Winter.) But they ARE good to use to buy extras!
- You can place a Special Order ahead of time online (click here for instructions), or just go shopping at the back of the truck. If you haven't placed a Special Order before, check out our shop online- we have lots more available for pre-order than we can bring to display at the stops.
- You can order a "Double Up", which will give you a whole extra bag. Give it to a friend, new colleague, host/hostess gift, or new neighbor. Or allllll for you. Ratatouille for days!!
- You can also order a "Large Upgrade" for a week or two and get the bigger bag without committing to the bigger package for the whole season.

- Small Share : 11 weeks left x $27/week = $297 (due right away)
- Large Share: 11 weeks left x $43/week = $473 (due right away)
PAYMENT PLAN
- Small Share: 11 weeks left x $29.50/week = $324.50 (six payments of ~ $54)
- Large Share: 11 weeks left x $48/week = $528 (six payments of ~ $88)
You need to make at least one of those six payments right away, but otherwise as long as you make regular and substantial payments at least once a month (we send out emailed Payment Reminders at the beginning of every month), your subscription just needs to be totally paid off by October 29th.

ALL GRASS-FED BEEF HOTDOGS
No mystery meat here! We take the lean beef trim and blend it with clean, grass-fed beef fat to make a 100% grass-fed beef hot dog. This dog is nitrate free and smoked to be a fully cooked product. Sold in 6-packs weighing a little more than 1 lb.
Hot dogs are one of the most difficult sausages for us to make. It is a fully emulsified product, which means that the meat and fat are blended until totally smooth and then the seasonings and water are paddle-mixed in to create a firm but juicy sausage. Our hot dogs are cased in natural sheep casings and smoked for 8 hours. For a firm snap, grill over medium heat or pan fry. For a softer dog, poach in salted water, near a boil.
