Friday Night Fireworks Cruise

Snap, crackle, and pop!  Add a little spark to your evening with a Friday Night Fireworks sailing cruise.  Climb aboard a beautiful sailing yacht and enjoy the show from one of the best seats in town!  Sail off before sunset and make a bang with a waterside view of the fireworks display.  Friday Night Fireworks Cruises occur on Fridays in June (starting June 9th) and July.  The night sky above the Kemah Boardwalk will be filled with a spectacular array of color and sound.  Whether you're visiting for the day, or you're a born and bred local, there's no better way to enjoy Galveston Bay's night sky.

Boat Bites

When South Coast Sailing asked me to contribute to the monthly newsletter I thought about two of my favorite activities, sailing and cooking. It occurred to me, why not write a cooking column that combines the two? I will attempt to inform and entertain you fine folks with dishes that I enjoy making, that may have a nautical flair, and can easily be made aboard a decently outfitted sailboat.
 
The first dish is something that Capt. Lucy Newman introduced me to on Jost Van Dyke. This lovely, sparsely populated, 3 square mile island sits just 2 nautical miles northwest of the BVI'S main island of Tortola. It was our second stop on the December 2016 flotilla after spending the first night at the Bite at Norman. It's amazing how quickly one falls into a relaxed mood when sailing "Nature's Little Secrets". For dinner that evening Captain Lucy was enjoying something that looked very familiar to me. "Why on earth are you eating a burrito in the BVI?", I asked. She quickly responded, "Capt. Terry, this is not a burrito, it's Chicken Roti.", and offered me a bite. Having never even heard of Chicken Roti, and being a big fan of gastro-tourism, I was all too happy to take her up on her offer. What I 
experienced was a curry-ish combination of chicken, potatoes and chick peas wrapped in a flour tortilla-like West Indian flat bread very similar to lavash. For our purposes, a thin flour tortilla will suffice nicely. Things I love about this dish are that it is very filling, the ingredients are easy to come by, and most of all, that it can be made using a single bowl to season the chicken and a single pot to prepare the dish. Great for sailors!
 
Here is my interpretation of Caribbean Chicken Roti:
 
Ingredients:
 
Chicken Marinade
  • 3 pounds boneless, skinless, chicken thighs cut in bite-sized pieces
  • ½  teaspoon white pepper
  • 1 teaspoon minced garlic
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon curry powder
Chicken Roti
  • 1 can unsweetened coconut milk (Do not shake the can, chill the can, you'll see why later)
  • 2-3 tablespoon curry powder
  • 1 large onion diced
  • 1 teaspoon ground allspice
  • 1 teaspoon ground nutmeg
  • 1 teaspoon thyme
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon white pepper.
  • 1 can of chickpeas, drained
  • 4 cups of cubed potatoes
  • 3-4 cups chicken broth or water
  • 2 tablespoons fresh cilantro, more for garnish
  • ½-1 teaspoon cayenne pepper (optional)
  • Salt to taste
Instructions
  1. Place chicken in a large bowl or sauce pan
  2. Add salt, garlic, thyme, white pepper and curry powder
  3. Mix chicken with spices until well coated, set aside in the fridge and marinate for 30 minutes or overnight.
  4. When ready to cook, open the top of the coconut milk can and remove the solidified coconut oil.
  5. Heat the coconut oil in a large sauce-pan, (add a little vegetable oil if needed) and add onions, garlic, thyme, cumin spice, all spice, smoked paprika, nutmeg and curry powder, stir occasionally for about 2-3 minutes until onions are translucent.
  6. Add the chicken and sauté for about 2-3 more minutes. Add chicken stock if necessary to prevent any burns
  7. Next add chickpeas, potatoes, chopped cilantro and chicken broth. Bring to a boil and let simmer, loosely covered, until potatoes are tender and sauce thickens, about 20-30 minutes.
  8. Garnish with more fresh cilantro and serve with flour tortillas or lavash. Serves 6

Harvest Moon Regatta
A Howling Good Time
October 4-11, 2017
Founded in 1987, the annual Harvest Moon Regatta event has grown from just under 20 boats to over 200.  The 150-nautical mile race begins at the Flagship Hotel Pier in Galveston and follows the Texas coast to Port Aransas over the course of 2 days and 2 nights, when the night sky is dominated by the beautiful harvest moon.  It's the perfect opportunity to gain offshore sailing experience or add to your sailing certifications.

We are also offering ASA 103/104 Combo (Basic Coastal Cruising & Bareboat Chartering) and ASA 106 (Advanced Coastal Cruising) during this event!
