Healthy Summer Recipe

Melon Salad


Ingredients:
  • 1/2 cup water
  • 1/2 cup sugar
  • 3½ cups (approximately) watermelon balls
  • 3½ cups (approximately) cantaloupe balls
  • ½ cup mint leaves, packed
  • ¼ cup lemon juice
  • 1 teaspoon amaretto (substitute amaretto flavoring or vanilla extract, if needed)
Instructions
  1. Begin by making the simple syrup. Combine the sugar and water in a saucepan over medium heat. Bring to a low simmer and stir, making sure that all sugar is dissolved. It should only take a couple of minutes of simmering. The liquid will thicken slightly and should remain clear. Remove from heat and let cool. (Remember: You are only using a portion of this syrup. Refrigerate the remainder for a few days if you'd like, for use in another recipe. It's great for sweetening tea or water.)
  2. Next, using a melon baller, scoop about 3½ cups of watermelon and 3½ cups cantaloupe into a large mixing bowl and set aside. If you don't have a melon baller you can always cut up the melon into about 1-1½? squares.
  3. Once the simple syrup has cooled, blend ¼ cup of the simple syrup, mint, lemon juice and amaretto in a blender until mint is finely chopped.
  4. Pour the mixture over the melon pieces and combine well.
  5. Serve right away, or cover and refrigerate until needed.

perspective on living a healthy life.  
 
Kyle Wilson, Treasurer
The John Cooper School - The Woodlands, Texas 
Teen Board Member 2014-Present

Kyle is a sophomore at the John Cooper School in The Woodlands. He is a member of the varsity basketball team at his school.
Kyle attended a leadership initiative program at Harvard University this past summer  and was a junior camp counselor at the NASA Wellness Program. Kyle enjoys sports and playing the piano.




School's Out for Summer
            
 As we get closer to the end of the school year, here are some important reminders of things to  do in order to stay healthy and safe during summer.
  • Activity and Nutrition -As school comes to an end, often so does your level of activity. The lack of a structured schedule with activities such as P.E. or athletics that school provides can lead kids to stay inside and watch TV or play video games. The National Health and Nutrition Examination Survey showed that, over the summer, kids often eat unhealthier and consume more junk food than fruits and vegetables. The lack of a disciplined schedule can lead to these bad habits taking over. You should try to eat healthier foods and establish a schedule of physical exercise everyday - whether it's exercising, swimming in the pool or playing tag outside with friends. 
  • Sun Protection - Another important thing to remember as you're having fun under the sun, is to protect you from it. Sunscreen is a crucial part of staying healthy over the summer. Not only are there near-term consequences to not wearing sunscreen in the sun, like sunburns, there are long-term consequences as well. Sunburns early in life can lead to the development of skin cancer as an adult. Also, wearing sunglasses or hats is important to the protection of your eyes. UV lights from the sun can damage your eyes for the rest of your life, which is why you're taught not to stare into the sun. Wearing sunglasses or hats as protection for your eyes can help prevent this and keep you're eyes safe.
  • Hydration - Lastly, as you get ready for the hottest time of the year, make sure to drink a lot of water. This is crucial as the warmer weather can lead to dehydration and lead someone to become overheated. So make sure to always drink plenty of water and pack it in a cooler when headed out to the beach or the pool.
I hope everyone remembers these few tips and has a fun, safe and healthy summer!
