Mid- to late-March is usually the height of Vermont's maple sugaring season so this month's newsletter is dedicated to all things maple. However, we just had 18-24 inches of fresh snow and it's still pretty cold out, so unless Mother Nature decides that winter is officially over in the next day or so, I think it is safe to say that this year's sugaring season will surely last well into early April!

During the weekend of March 25-26, many of Vermont's sugar makers participate in the Maple Open House Weekend (one of my favorite weekends of the year!). Sugarhouses around the state, including several in our area, open their doors and invite visitors in to experience the art and beauty of making maple syrup and all of the hard work that goes into each delicious drop of "liquid gold"! Most sugarhouses are small family/neighborhood operations and they may not advertise, but if you see steam coming from a rustic cabin or "shack", and you think it is a sugarhouse, stop in . . . I bet you'll be welcomed!

Maple Sugaring * 
It's March . . . and that means it's "Sugaring Season" here in southern Vermont!
  • About one of every four trees in Vermont is a maple.
  • Sap flows when nighttime temperatures drop below freezing and daytime temps are above freezing.
  • On average, it takes 40 gallons of sap to make one gallon of maple syrup.
  • Vermont is the largest producer of pure maple syrup in the United States.
  • According to the last Census of Agriculture, 1,310 Vermont farms indicated involvement in maple syrup production (In comparison, Quebec has approximately 10,000 maple syrup producers). 
  • Depending on which source you reference, Vermont controls approximately 35-46 % of all U.S. maple syrup production and roughly 7-10% of the world's maple supply.
  • The maple industry in Vermont yields about $15 million in direct sales each year.
  • Industry representatives estimate that approximately 75,000 acres of Vermont forest are being used to produce Vermont's annual crop.
  • Maple syrup contains an abundant amount of naturally occurring minerals such as calcium, manganese, potassium and magnesium. And like broccoli and bananas, it's a natural source of beneficial antioxidant.
  • Vermont was the first state to pass a maple law that established purity, quality, and labeling regulations.
Since 2014, Vermont uses a grading system that aims to provide universal grading that applies to syrups produced in any of the states and also in Canada. Each grade has a color and a flavor descriptor:
  • Grade A: Golden Color with Delicate Taste
  • Grade A: Amber Color with Rich Taste
  • Grade A: Dark Color with Robust Taste
  • Grade A: Very Dark Color with Strong Taste

In some sugaring operations you might just see the color indicator on labels, e.g. Golden, Amber, Dark and Very Dark.

Green Mountain Gourmet
This month I am featuring two very simple and delicious recipes that use maple syrup (surprise!).

Maple Barbecue Sauce
¾ cup Vermont maple syrup
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon orange zest
1 tablespoon fresh orange juice
2 tablespoons chili sauce or Sriracha
½ teaspoon dry mustard
1 teaspoon onion powder
½ teaspoon black pepper
1 teaspoon salt

Add all of the ingredients to a deep mixing bowl and whisk well. Brush it on chicken, pork or beef before grilling and baste often.
 
Maple Whiskey Sour
2 ounces bourbon whiskey
1 ounce freshly-squeezed lemon juice
1 ounce maple syrup
 
Add all of the ingredients to a shaker and shake vigorously. Pour over ice and serve immediately! This recipe can easily be multiplied using a 2:1:1 ratio and I've been known to serve it in a pitcher while visiting our local sugarhouses.

Join Weston resident Malcom Bell as he discusses his new book,
"The Attica Turkey Shoot: Carnage, Cover-Up, and the Pursuit of Justice," which tells a story of a 1971 riot at the Attica Correctional Facility, where state police and prison guards slaughtered thirty-nine hostages and inmates and tortured more than one thousand men after they had surrendered. State officials pretended that they could not successfully prosecute the law officers who perpetrated this carnage, and then those same officials scurried for shelter when a prosecutor named Malcolm Bell exposed the cover-up. Northshire Bookstore, 7:00pm-8:30pm

Join Joe Blair for a demonstration of apple tree pruning on the grounds at Hildene. Blair will focus on two forms of pruning:  corrective pruning for ornamentals and pruning to increase productivity for apple-bearing trees.  The arborist will demonstrate these techniques on the Lincolns' historic apple trees.  There will be time for questions and answers throughout.  12:00 noon to 2:00 pm. This Hildene horticultural program is free and open to the public.  Check in is at the Welcome Center.
