Pinot Noir or Riesling pairs well

Recipe for the New Year!
Roast Chicken Thighs w/Veggies!
-2.5 lbs. Chicken Thighs(bone in, skin removed)
-2 cups chopped red potatoes
-2 cups chopped sweet potatoes
-1 large onion chopped
-6 cups fresh baby spinach
-2 tbsp olive oil
-3 cloves garlic minced
-1 tsp rosemary crushed
-1/2 tsp paprika
-1 tsp coarse salt, black pepper
1) Preheat oven to 425 degrees
2) In a large bowl, combine potatoes, onion, oil, garlic,3/4 tsp salt, 1/2 tsp rosemary, 1/2 tsp. pepper.

ransfer to a baking pan, pre-coated with cooking spray
3) In a small bowl, mix paprika, remaining salt, rosemary and pepper. Sprinkle this mixture over the chicken. Arrange the chicken over the vegetables in the cooking tray.
4) Roast for 25 minutes. Add Spinach over top of chicken and continue cooking 8-10 mins. Enjoy this healthy meal to kick off the New Year~ Still ok to have a glass of wine!
