As 2017 comes to a close, so does the GHT Healthy Holiday Challenge. There are only a few days left. The week 3 results are reported below. Congratulations to the winners! Many participants have been very dedicated to healthy habits and earned the maximum of 21 points each week. 

Remember to report all your points as participants can be chosen more than once. In addition to the weekly winners, those that report points for all four weeks will be eligible for additional chances to donate. WINTER FRUIT AND VEGETABLE IDEAS
Winter may not offer the abundance of fresh fruit and vegetables that summer does. But there are many ways to enjoy both during the winter months. 

Combine With Oatmeal

Combine fruits and even vegetables with your oatmeal. Carrots, sweet potatoes and squash can all be cooked with oats and turned into a warm nutrient-rich meal. For fruits try dicing up some bananas or apples and adding to your oatmeal. 

Switch to Frozen

Often times frozen fruits and vegetables are flash frozen so they retain their high-season flavor and nutrition. 

Try Slaw

Slaws are not just for the summer. Try a broccoli slaw, root vegetable slaw, cabbage slaw or cabbage-beet slaw. 

Root Vegetables

One of the most popular ways to eat a lot of vegetables in the winter is to roast a large pan of as many root vegetables as you want. Try carrots, parsnips and chickpeas with a little pomegranate molasses.  Once you have roasted your favorite vegetables eat them as a side dish. Also try topping tacos with them or stuff them into a burrito. Your leftovers can even be frozen.

Fruit As A Topping

Winter is a perfect time to try stewed, poached, baked or roasted fruit. Stew prunes in port wine or make a pear compote with vanilla, ginger and lime. Any would be a perfect addition to your yogurt.

Do not be afraid to experiment and try new combinations. Have a little fun creating your own fruit and vegetable dishes!
