Guiding your Favorite Restaurants to 4Leaf

When your favorite restaurants start offering 4Leaf meals (with 80% or more of their calories from whole plants), two things will happen:

1. You will be eating better when you go out.
2. You will also be saving money.

Introducing the "Hicks Special." In April of 2010, I submitted a one-page, letter size document to the chef at our yacht club in Stonington, CT--and framed it so that it would be convenient to hang in the club's galley.

You can do this too.  Just submit these five simple guidelines to the owners of the restaurants you most frequent. Here is an improved version of what I submitted in 2010.

Thank you for helping me meet my dietary needs. Hopefully, these guidelines will make it easier for you to prepare these special meals.

5 Simple Guidelines for the "Hicks Special"

1. Mostly vegetables. At least 2/3 of the plate should be vegetables--whatever combination of 2 or 3 types that you might have on a given day. The other 1/3 of the plate should be starch: like grains, legumes or potato (not French fries).

2. Generous portions . The portions should be generous enough to fill the plate. It takes a lot of whole plants to make a complete meal--with enough calories to keep you going.

3. Whole grain . Whole grain brown or wild rice and whole grain pasta are preferred.

4. Oil, salt & animal products. Please make minimal to ZERO use of oil, butter and added salt...also NO meat, cheese, milk, eggs or seafood.

5. Whole grain bread. I usually like to have a little bread on the side and would prefer that it be whole grain if possible. 

$$ Bonus Time.  In April of 2010, the price on the menu for the daily "Hicks Special" 4Leaf meal was $12; just about half the average price of all the other entrees. 

And since I ate at the club at least twice per week, I saved $24 per week--well over $1,000 per year.
