Traditional Viking Recipe

Cabbage soup with pork

1 piece of smoked pork
2 jugs water
2 onions
Cabbage
2 cups barley groats
Salt to taste

Place the smoked pork in an earthenware pot and pour over 2 jugs of cold water. Bring to the boil, skim and leave to simmer for about an hour until tender. Remove the pork from the soup.

Add chopped onions and bar ley to the soup. Let it simmer till the barley groats are tender. The soup must not get to thick. If so, add more water.

Rinse the cabbage and chop it finely. Add it to the soup and let it cook for about 30 minutes. Season with salt.

Serve the soup with sliced pork and rye bread.

Traditional Puerto Rican Recipe - It's like nothing you've ever tasted. 

 

Puerto Rican Caramel Flan 

The Caramel-

 

1 Cup White Sugar
1/4 Cup Water

 

The Flan-

 

1 Cup White Sugar
6 Eggs
2 Cans Evaporated Milk
1 Can Sweetened Condensed Milk
1 tsp Vanilla

Method
  
60 Minutes
  1. Preheat oven to 350°
  2. For the Caramel, combine 1 cup sugar and 1/4 cup water in a glass measuring cup or other suitable microwavable bowl.
  3. Microwave on high for 5 minutes +/- depending on your microwave. Watch towards the end stopping when you reach desired color. Do not overcook and burn.
  4. Remove from microwave and pour into pans to be used. Tilt to coat bottom. Set aside.
  5. For flan combine sugar, eggs, evaporated milk, condensed milk and vanilla.
  6. Stir well taking caution to NOT stir aggressively which will introduce too much air. Too much air will create bubbles during cooking. It won't ruin it....but will put bubbles in it. Proper flan should be a solid custard with no bubbles. Got bubbles, enjoy anyway and make another!
  7. Pour flan mixture over caramel mixture
  8. Put into water bath "Baño de Marie". Make this by lining a larger vessel with a clean towel and putting flan pan inside.
  9. Pour hot water between the pans up to the halfway point of the Flan pan.
  10. Carefully put into 350° oven for 1 hr or until toothpick inserted in center comes out clean. Use caution when removing from oven as hot water is still in the "Baio de Marie".
  11. Allow to cool slightly, run butter knife around edge to loosen. Put a plate upside down over flan and invert. This will put caramel layer on top.
