Teacher Appreciation Week

The teachers at Katie's Kids work hard on a daily basis to help meet our children's physical, emotional, and developmental needs!  This year we will be celebrating Teacher Appreciation Week May 1-5.  During this week we would like to take the time thank the teachers and support staff for all that they do to help our children develop!

Since many families lead very busy day-to-day lives, there are various opportunities that allow all of the families of Katie's Kids to be a part of the week without a lot of work!  There will be a donation box available at the front desk for families who wish to make monetary donations for the week's events.  Monetary donations help purchase a special thank you gift for each staff member, and can assist with the week's food items if needed. Cash or check is accepted!  Checks should be made payable to 'Katie's Kids' with 'Teacher Appreciation' in the memo line.   

As the week nears there were also be sign ups available that allow families to sign up for the provision of designated food items for theme days.  There are many ways in which we can provide thanks to the teachers during this very special week, so if you have any connections to the community that may assist in planning please feel free to contact the Teacher Appreciation Committee through Jody ([email protected]).

Easy, Tasty, and Healthy Snacks 

Healthy Apple Muffins


Amazing, healthy apple muffins made with maple syrup and whole wheat flour! No one will guess that this simple cinnamon apple muffin recipe is good for you, too. 


INGREDIENTS
  • 1¾ cups white whole wheat flour or regular whole wheat flour
  • 1½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup grated apple
  • 1 cup apple diced into ¼" cubes
  • ⅓ cup melted coconut oil or extra-virgin olive oil
  • ½ cup maple syrup or honey*
  • 2 eggs, preferably at room temperature
  • ½ cup plain Greek yogurt
  • ½ cup applesauce
  • 1 teaspoon vanilla extract
  • 1 tablespoon turbinado sugar (also called raw sugar), for sprinkling on top
INSTRUCTIONS
  1. Preheat oven to 425 degrees Fahrenheit. If necessary, grease all 12 cups on your muffin tin with butter or non-stick cooking spray (my pan is non-stick and doesn't require any grease).
  2. In a large mixing bowl, combine the flour, baking powder, cinnamon, baking soda and salt. Blend well with a whisk. Add the grated and chopped apple and stir to combine.
  3. In a medium mixing bowl, combine the oil and maple syrup and beat together with a whisk. Add the eggs and beat well, then add the yogurt, applesauce and vanilla and mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 30 second bursts.)
  4. Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). The batter will be thick, but don't worry! Divide the batter evenly between the 12 muffin cups. Sprinkle the tops of the muffins with turbinado sugar. Bake muffins for 13 to 15 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean.
  5. Place the muffin tin on a cooling rack to cool. If you have leftover muffins, store them, covered, at room temperature for up to 2 days, or in the refrigerator for up to 4 days. Freeze leftover muffins for up to 3 months.

NOTES
MAKE IT VEGAN:
This is really my best guess, but I think you could replace the eggs with flax "eggs" and replace the yogurt with vegan buttermilk-try mixing 1½ teaspoons vinegar with a scant ½ cup non-dairy milk. Let it rest for 5 minutes before adding it to the other liquid ingredients. (You could also try using more applesauce in place of the yogurt but I'm not sure it's acidic enough to counteract the bitter taste of the baking soda.)
MAKE IT GLUTEN FREE: 
A gluten-free all-purpose flour (such as Bob's Red Mill brand) blend should work well here. 

IF YOU ARE BAKING WITH HONEY:
Honey tends to brown quickly, so to avoid overdone muffins, bake muffins at 325 degrees Fahrenheit until a toothpick inserted in the center comes out clean, about 23 to 25 minutes.

Serves: 12 muffins

Making a Homemade Instrument with Your Kids

As I enter into the daycare classrooms each week, the kids always want to know what is in my bag. Even the infants and toddlers show they want to know by literally unzipping my bag when I am not watching and rummaging through. They are so intrigued by my bag because they know that each week I bring a variety of instruments to the group that they get to play. One of the favorites among all my classrooms is the rainstick. The sound can be very relaxing and the colors and beads create a visual stimulus for all ages. You can buy these instruments, but there is also a way to easily make a homemade rainstick with your children. Here is what you will need:
1-cardboard tube; the stronger the better but wrapping paper roll or a paper towel roll will work as well
Toothpicks or nails depending on the thickness of your tube
Rice or beans
Decorative papers/feather/glitter etc.
Glue
Plastic caps that fit your tube (yogurt lid, orange juice lid, etc)
Instructions: Hammer the nails or poke the toothpicks though your tube at random around all parts of your tube. Clip off ends of toothpicks for safety. Glue a lid onto one end and fill the tube with either rice or beans. Then glue on the other lid to the end. Once this part is done allow your kids to decorate the rainstick with a variety of papers or feathers. Let your rainstick dry and then it will be ready to be played. A song I like to use is called, "I Don't Care if the Rain Comes Down" which can be found on youtube.com. Kids of all ages also enjoy when I change the song to sing their name (e.g. Brian doesn't care if the rain comes down). This is a fun activity to do with your kids and will hopefully provide fun music time for them at home.
