  THE LUNCHBOX


 
Cheddar Cheese and Bacon Balls
via Diet Doctor





Ingredients (organic) 
  • 1.3 lb bacon
  • 1 tablespoon butter
  • 1.3 lb cream cheese
  • 1.3 lb cheddar cheese
  • 2 oz. butter, at room temperature
  • ½ teaspoon pepper (optional)
  • ½ teaspoon chili flakes (optional)
Instructions
  1. Fry the bacon crispy in butter. Remove from the pan and let cool completely.
  2. Crumble or chop the bacon into small pieces and place in a medium-sized bowl.
  3. In a bigger bowl, mix the grease left over from frying the bacon with all the remaining ingredients - by hand or with an electric handmixer.
  4. Place the big bowl in the fridge for 15 minutes to set.
  5. Make 24 walnut-sized balls, using two spoons. Roll them in the crumbled bacon and serve.
Tip
You can use any kind of grated flavorful cheese you prefer. If you don't eat bacon, you can roll the cheese balls in chopped herbs, grated Parmesan cheese or chopped nuts.

But what happens next? 

After doing a detoxing and uplifting cleanse at NourishMe, we suggest a follow-up by following a Keto Diet, or Ketogenic Diet. This can be undertaken by both men and women. This diet relies on a high intake of protein and fat such as meat, seafood, olive oil, eggs and non-starchy vegetables while eliminating all carbohydrates. In particular, women may experience a number of health benefits with this diet including hormonal balance, weight loss and even an anti-aging effect.

Here's how it works: Once your body is deprived of carbohydrates, it goes into a state known as ketosis in which both dietary and excess body fat is converted into ketones in the liver and used to fuel your brain and muscles. This diet forces your body to fuel itself through fat, not sugar, and carries with it a number of health benefits for women.

The theory behind ketogenic diets and weight loss is that having less insulin helps eliminate food cravings. Because your blood sugar is stable, episodes of hypoglycemia, low blood sugar, don't trigger attacks of sudden hunger and subsequent binge eating. If you consume fewer calories, you'll lose weight.  
 
Now to the food. Unless you are a vegetarian or vegan this diet will make you very happy. A typical meal might be poached salmon over a bed of spinach sautéed with red peppers, and garlic in butter. Delicious.

  1. "Fats mean healthy fats. Trans fats and sugar are not healthy fats. Healthy, clean protein should be from grass fed, free range, wild caught sources.
  2. Green veggies are good, slow-burning carbs, and you want those to stay alkaline and gain nutrients, anti-oxidants and fiber benefits. In addition, they're low-glycemic and don't cause blood sugar spikes or insulin resistance. Limit unhealthy carbs. Avoid gluten-containing whole grains, processed foods and dried fruits. When you do eat an unhealthy carb, try and eat it with some fiber, healthy protein or healthy fat to help reduce the carb's sugar load.
  3. Incorporate the realities of life into a ketogenic diet.  Vices are part of most of our lives so yes, be healthy and stick to a keto-alkaline diet overall but also recognize you will bounce in and out of ketosis due to life. You'll eat something at a restaurant, you'll give yourself a treat. It is best to just go with the flow."
 
Try this diet for two or three weeks. Then reassess your needs. Not eating carbs and sugars are a good idea at any time. Fruit, grains, breads and pastas should be kept to a minimum.

Community Library Earth Day Screening: 5:30 p.m. April 20.
The Environmental Resource Center will screens PBS' "Rachel Carson" a documentary in honor of Earth Day.

The writer Rachel Carson inspired the modern environmental movement through the publication of her 1962 book, Silent Spring. The book warned the American public of the impact of pesticides on the environment and unleashed an extraordinary national debate about science and safety. This 120-minute documentary provides an illuminating and inspiring portrait of a seminal figure whose writings changed the course of our nation and are still highly relevant today.

Before and after the film, ERC staff will be on hand to answer questions about its "Pesticide Action" program which is working to reduce the use of pesticides, herbicides, and chemical fertilizers in the Wood River Valley. Additionally, students from the Wood River High School's W.A.T.E.R. Club (Environmental Club) will provide information on their current project which is focused on native plants and the protection of local pollinators.

Earth Day, Saturday, April 22 will feature two Seed Exchanges.

Hailey Grange Hall 10 a.m. - 1 p.m. 
(This will be the South Valley Seed Exchange and also include commercial seed vendors and potted plants for sale)

Ketchum Community Library 3 - 6 p.m.
Garden, Seed and Local Food Fair with booths, speakers, food and beverages included.
