Indonesia Java Kayumas comes from one of the four major estates in Java, the Kayumas Estate. Built in 1900, this farm has had a long and rich history of producing some of the best coffee in Indonesia. It is currently 725 hectares large, which yields approximately 350 tons of high quality coffee per year. The main harvest period lasts from May-July and will continue through September. This coffee is carefully hand-picked and goes through a washed process before it reaches the sun drying racks. Java Kayumas is recognized for being sweet and nutty, with chocolate and malty notes.

This fragrant coffee is grown at the Camiseta Estate in the Boquete region of Panama, in the middle of the mountain highlands.
The nutrient-rich soil on the slopes of the Baru Volcano make this region ideal for growing coffee.

This Panama is one of our relationship coffees; in the summer of 2016, we traveled to Boquete to tour the farms with owner Norberto Suarez,
who manages a collection of farms across the region.

Smooth, creamy texture and a well-balanced acidity. Bright citrus flavor with notes of cacao, lemon, grapefruit, and butter pecan.

Jim is having a fabulous time in Kenya.  He has already booked a couple of Kenya Naturals (fruity in flavor) from our broker, Josh, from InterAmerican.  He enjoyed the farm visit and has cupped a multitude of coffees.  Follow Jim on our Muddy Dog Facebook page for updates on his journey.

The roastery will be closed on Saturday, March 18th while Jim is traveling.   All orders will need to be picked up at the farmer's market.

Directions:

Fill footed mug or a mug with hot water to preheat it, then empty. Pour piping hot coffee into warmed glass until it is about 3/4 full. Add the brown sugar and stir until completely dissolved. Blend in Irish whiskey. Top with a collar of the whipped heavy cream by pouring gently over back of spoon. Serve hot.
