Ingredients
- 1 pound of skinless, boneless chicken breast halves (cut into 1 inch pieces)
- 1 tablespoon of olive oil
- 1/2 teaspoon of freshly ground black pepper
- 1/4 teaspoon of kosher salt
- 1 cup of sliced bell peppers
- 1 tablespoon of chopped oregano
- 2 minced garlic cloves
- 1 1/2 cups of chopped tomatoes
- 1/4 cup of unsalted chicken stock
- 1 1/2 ounces of pitted green olives, sliced (optional)
- 1/4 cup of crumbled feta cheese (optional)
Instructions
Heat a large skillet over medium high heat. Add oil, swirl to coat. Sprinkle chicken with black pepper and salt. Add chicken to the pan. Cook 7 minutes or until done, stirring occasionally. Remove chicken from pan. Add bell pepper, oregano, and garlic to pan. Saute for 2 minutes. Stir in chicken, tomato, and stock. Cook for 1 minute. Remove and serve with sprinkle of olives and feta.
*Serve with a side of green vegetables and a sweet potato to finish if off or sprinkle over a cup of whole grain cous cous.*
