Vegetables stewed in pan jus reduction ~ carrots, turnips, potatoes, celery, caramelized onion stewed together in roasting au jus

topped with charcoal grilled

Fresh Trout, on the grill

stuffed w/ melted leeks, Freshly 'grilled' over the charcoal fire grill & drizzled with an Emerald Isle butter sauce served with colcannon ~

Braised Cabbage & Ham~

the cabbage is braised

with caramelized onion & fingerling potato pan grilled ham slices join the mix ~ finished with a hint of white truffle oil

pan roasted & topped with a wee bit of puffed pastry in a pool of parsley'd emerald butter sauce with peas and parsley'd potato.

ground lamb stewed with carrots, potato, caramelized onion & leeks with celery & parsnips ~ topped with russet potato mash & baked 'en casserole
