Every spring Winexpert releases the very popular Island Mist Hard Lemonade Ingredient Kits.  In addition to the perennial favorite Hard Pink Lemonade, NEW this year to the line-up is a Hard Blueberry Lemonade! These kits are easy to make and quick to drink, with almost no aging required.  Great summertime refreshers, they can be bottled like wine or even kegged and force carbonated! Kits will arrive in March, just in time for folks to make and enjoy them in the warmer weather to come.  Pre-order now for delivery in mid- March. California Sauvignon Blanc Rose features a pale salmon color with lovely tropical notes of pineapple and white peach with raspberry and cherry. The wine is off-dry but the vibrant acidity balances it out. Full and juicy, a crisp and refreshing finish makes this a perfect sipping wine.  Rosé really does go with (almost) everything. This particular rosé has some residual sweetness making it a perfect partner for spicier fare. It's also a great match for seafood, chicken and pork.

Wyeast 1882-PC Thames Valley Ale II™
Profile: This strain was originally sourced from a now defunct brewery on the banks of the River Thames outside of Oxford, England. Thames Valley II produces crisp, dry beers with a rich malt profile and moderate stone fruit esters. This attenuative strain is also highly flocculent resulting in bright beers not requiring filtration. A thorough diacetyl rest is recommended after fermentation is complete.
Beer Styles: Ordinary and Special Bitters, ESB, Northern English Brown, Robust Porter, Dry Stout, Foreign Extra Stout, English Pale Ale and IPA
Alcohol Tolerance: 10% ABV
Flocculation: High
Apparent Attenuation: 72-78%

Wyeast 1768-PC English Special Bitter™
Profile: A great yeast for malt-predominate ales. Produces light fruit and ethanol aromas along with soft, nutty flavors. Exhibits a mild malt profile with a neutral finish. Bright beers are easily achieved without any filtration. It is similar to our 1968 London ESB Ale but slightly less flocculent.
Beer Styles: Blonde Ale, English IPA, ESB, Oatmeal Stout, Southern English Brown, English Bitter, Sweet Stout, Pale Ale

Wyeast 1026-PC British Cask Ale™
Profile: Wyeast 1026-PC is a great yeast choice for any cask conditioned British ale style, and especially well-suited for hoppy bitters, IPAs and Australian ales. A good attenuator that clears readily. Low to moderate ester production in fermentation, letting malt and hops come through, finishes crisp and slightly tart.

Grown in Tuscany Italy,  Located on the Tyrrhenian Sea which gives the area a warm Mediterranean climate.   The terrain is quite hilly and these hills serve as a tempering effect on the summertime heat.
TASTING NOTES
  • Expressively refreshing with hints of peach, green apple and fresh lime. Hint of tarragon and a quenching acidity on the finish.

Valencia Spain.   Tempranillo, Carnacha and Bobal bring lush and hedonistic qualities, while  Cabernet Sauvignon and Syrah offer body and structure.   Notes of black and red fruit, cherry cola, anise and white pepper.   Powerful yet subtle mouth feel.   Dry Red Wine, Medium-Full Body, Medium-Heavy Oak, 13% ABV.

San Joaquin Valley, California.   Blanc De Noir is a French term which means "white wine from dark grapes".   No skin contact after pressing keeps color light and tannins at bay.  Hints of  Crabapple, white peach, grapefruit and strawberry.  Off Dry White Wine, Light-Medium Body, 13% ABV.
 
Riverland Australia.   Full bodied blend of Cabernet Sauvignon and Grenache with hints of  Black currant, cigar box, black cherry and raspberry.   Warm spice rounds out the finish.  Dry Red Wine, Full Body, Heavy Oak, 13% ABV.
 
New England IPA Ingredient Kit
More hop flavor, less bitterness. With over half a pound of hops this beer is full of tropical fruit, citrus, and herbal aromas. A dank charge of Mosaic and Ekuanot hops at flame out brings massive flavor and aroma without sacrificing malt character. A quarter pound of dry hops gives this beer its distinctive haze and huge fruity aroma. Well balanced, but definitely hop forward.   East vs West? Embrace the haze!  

Hop Hash
As whole cone hops are processed into pellets, a small amount of lupulin collects on the screens as they pass through toward the pellet die. Previously lost in production, industry leaders are now realizing its value and we now have deliciously dank hop hash. Hop hash is recommended as a late whirlpool addition, just before knock out to fully capture the hop aromatics.  Limited Quantities Available.

Varietal grape concentrates make an excellent wine base.   While more testing and adjusting is needed than with a wine kit, you have more freedom to combine varieties and ingredients to make a truly custom wine.   Recipe on can calls for two 49 oz cans or one 96 oz can per 5 gallons of wine.  Additional Ingredients required (but not included)  Sugar,  Yeast Nutrient,   Acid Blend or Tartaric Acid, Wine Yeast and Clarifier.

Advanced Homebrewing - All Grain Brewing   -  $25 per person

Learn all the basics of mashing barley for beer brewing. Information ranging from ingredients to equipment will be discussed. Emphasis of this class will be on single step mashing, other methods will also be discussed. Demonstrations will show mashing methods and sparging methods using three different styles of equipment. Hands on demonstration will allow you to actually see the process in action. Basic brewing experience is beneficial as the class will focus on wort production.   Approximately 5 hour class.  Light Lunch and refreshments will be available.

Introduction to Winemaking  -  $15 per person

Learn how easy it is to make great wine at home. This class will focus mainly on how to make wine from Wine Kits, canned fruit and juice concentrates. We will be covering equipment, s anitation,  ingredients, f ermentation, bottling,  procedures, techniques  and plenty of good, practical advice from an experienced winemaker!   Hands on demonstration lets you see the process from beginning to end while the  small, informal class setting ensures you get all your questions answered.  This is the perfect class for beginner wine makers.   Approximately 3 hour class.  Light snacks and refreshments will be available.

Malt, Hops Yeast and Water are the four main elements in beer.  This workshop is designed to dive into each of these four components and explain how they are used and how they work together to create different beer styles.  Subjects covered include:
Malt and Malt Extract - How to determine specific gravity, color and character.
Hops - What, When, Where and how to use them for different effects.
Yeast - Using different varieties for different character, yeast health and yeast starters.
Water - How water chemistry can effect reactions in the mash, yeast health and beer flavor.
Approximately 3 hour class.  Light snacks and refreshments will be available.
  
Kegging Your Homebrew -  $15 per person

This class is designed to introduce the home brewer to packaging beer (or other beverages) in kegs for carbonating and serving. Basics included in the class will be keg cleaning, Dis-assembly & assembly, pressure testing, carbonation methods, serving pressures and most standard equipment included for kegging home made beer, mead, cider and even soda.   Approximately 3 hour class.   Light snacks and refreshments will be available.
