Bottarga
Very common in Sicilian and Sardinian cuisine, Bottarga is made from the roe pouch of grey mullet. The roe is salted, pressed and left to dry.  Grated or thinly sliced, bottarga is a delicacy on spaghetti, risotto and Fregola Sarda.  Available whole and grated in jars.
