Kale; an excellent source of protein, Vitamin A,C,K and dietary fibre |
Recipe for Super Bowl Sunday!
Baked Kale chips & greek yogurt dip!
-1 lb. curly Kale, stems and large inner ribs removed
-1/4 cup extra virgin olive oil
- 1 or 2 cloves garlic minced
-salt and pepper to taste
DIP
-1 cup greek yogurt, plain
- 2 tbsp. lemon juice, 1 tsp. lemon zest
- 1 garlic clove minced, 1 tbsp. virgin olive oil
-Toss Kale with olive oil and garlic
-Spread Kale on parchment paper on 2 baking sheets; oven @ 375 F
-Bake on upper rack of oven for 8 minutes
-Move to lower rack of oven for 8-10 minutes,
until the edges are brown and Kale is crisp when shaken in the pan
Season with Salt and Pepper
-whisk yogurt, lemon juice, lemon zest, garlic and oil together in a bowl
-salt and pepper to taste
Just like real chips, only healthier (mmm chips!)
