Organize Your Shift: Applying the Concepts of mise-en-place to Time Management
Mon. 2/27/2017 12-4pm and 3/13/2017 1-4pm, Plymouth
Mise-en-place means to put in place. Chefs use this concept to prepare for each shift. In this session, we will take the concepts of mise-en-place and apply them to your role in the hospitality industry. Although it seems improbable to put all you must do in a day in its place, this process of preparation, planning and organizing adapted from Dan Charnas' book Work Clean, will help you feel calmer even on the most hectic day.

The structure of the sessions is unique in that you will be given tools to plan and prepare for a week. You then have the opportunity to put that plan into action. When you return to the second session, we as a team will work together to help each other overcome any obstacles. This interactive process will allow you to practice the process and feel what it is like when all you need to do finds its place.
