CHEW THE FAT
The connection between essential fatty acids and healthy skin
Fat is back. At least, when it comes to your diet.
Enjoying plenty of healthy fats like avocados, salmon, nuts, chia seeds, and plant-based oils is great for
reducing inflammation levels and adding to
healthy hair and glowing skin. Essential fatty acids (EFAs) are a type of polyunsaturated fatty acid that cannot be produced by the body and therefore must be obtained from the diet. There are two classes of EFAs: omega-3 and omega-6.
EFAs, especially alpha-linolenic acid (ALA) and arachidonic acid (AA), make up a large percentage of the
epidermis.
So it makes sense that deficiency of these healthy fats can lead to sub-optimal skin health that can be seen in the
signs of aging
, dry skin, and redness. Additionally, there is evidence that re
duced fatty acid metabolism plays a significant role in inflammatory skin conditions like
psoriasis
, and correcting any EFA deficiencies can reduce symptoms.
Since the skin's fatty acid composition can be significantly modified by diet, it is important to consume sources of both omega-3 and omega-6 fatty acids -- fats that are crucial to skin function and
appearance
. Omega-3 fatty acids seem to have an additional protection from
photo damage
and UV
photo aging
while omega-6 fatty acids play a key role in skin barrier function and
structural
integrity. Good sources of omega-6 fatty acids include pumpkin seeds, sunflower seeds, and plant-based oils. You can find omega-3 fatty acids in mackerel, walnuts,
flax seeds
, sardines, and hemp seeds.
Chia seeds are a great source of both omega-3 and omega-6 fats, with 1 ounce (2 tblsp) providing 5 grams of omega-3 fatty acids, along with 11 grams of fiber and 4 grams of protein. These tiny seeds are also loaded with calcium, manganese, magnesium, and zinc. Because of their high-fiber content, they swell when added to liquids, making them a great substitute in baked goods and for adding to oatmeal, smoothies or jam.

Wild Blueberry Chia Parfaits

Enjoy this beauty-boosting chia seed pudding parfait, loaded with alpha-linolenic acid, and essential fat.
Blueberry Chia Jam
1 1/2 cups frozen wild blueberries, thawed
1/4 cup water
3 tblsp chia seeds
2 tblsp maple syrup
Peanut Butter Granola
1 1/2 cups old-fashioned rolled oats
1/4 cup chopped roasted peanuts
1/3/cup whole wheat flour
1 tsp baking powder
1/2 teaspoon salt
1/2 cup creamy peanut butter
1/4 cup maple syrup
2 tblsp unsweetened almond milk
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/8 tsp ground nutmeg
2 cups yogurt of choice (regular or vegan)
Make the blueberry chia jam:
Place the wild blueberries and water in a high-powered blender and pulse a few times until broken up. Place the berries, chia seeds, and maple syrup in a jar. Cover and shake until well combined (can also whisk together in a bowl). Refrigerat
e for at least 6 hours or overnight to set.
Make the granola:
Preheat oven to 300 degrees F. Mix together the oats, peanuts, flour, baking powder, and salt in a large bowl. In separate bowl, whisk together the peanut butter, maple syrup, milk, vanilla extract, cinnamon, and nutmeg.
Pour the peanut butter mixture into the oat mixture and stir until just combined. Pour granola mixture on a baking sheet and spread evenly. Bake for 15 min, stir, pat down and bake another 10-15 min until golden brown.
Remove baking sheet from oven and let cool completely. Cooling is what allows the granola to form clumps, so don't skip this step.
Assemble the parfaits: Layer the chia jam and yogurt into jars. Spoon on granola and serve immediately. If making to enjoy for later, layer the jam and yogurt into jars and cover. Add granola right when ready to serve.
