Adapting Wisconsin's liquor laws to account
for evolving industry
by Kris Schuller,
We Are Green Bay.com
|
"Most industries don't live under a cap that says you can't make this many cars or make this many sandwiches," said Brent Weycker, owner of Titletown Brewery.
|
GREEN BAY, Wis. (WFRV) - Big changes are being proposed to the state's liquor laws in a bill which would impact breweries, wineries and distilleries. Local 5's Kris Schuller reports the legislation's author says it all boils down to fairness.
At Titletown Brewery - employees are busy bottling up a new batch of beer. But under current law owner Brent Weycker can only make so much product in a year, 10,000 barrels, regardless of demand.
"Most industries don't live under a cap that says you can't make this many cars or make this many sandwiches," said Weycker.

Japan distilleries starting to brew craft gins
by Tor Ching Li,
Straits Times
|
When The Good Meals Shop opened in Shibuya [Tokyo] in 2014, it offered 30 types of gin. Now, it serves more than 230 types of craft gin. |
First it was whisky. Now Japanese distilleries are awakening to the allure of craft gin. They are coming up with new recipes and introducing new flavours such as yuzu, sakura flowers, green tea and sansho, a peppery spice harvested from Japanese prickly ash.
Technically, gin is any neutral spirit that is predominantly flavoured with juniper berry, a blue-ish green berry-like fruit. [Distillers] are free to add other botanicals to make a unique-tasting drink.

Don't know a 'Barrel' from a 'Butt' from
a 'Hogshead'? Allow this Maine cooper
to explain
by Jennifer Mitchell, Maine Public [PBS, NPR]
These days, a "Cooper" might refer to a brand of cheese or a compact car. But a hundred years ago, a cooper was commonly known as person who built wooden casks to store wine, whiskey or other consumables - and the craft is still alive.
If you like a nip of fine, cask-aged whiskey, part of what you're enjoying is the flavor of the barrel it came in. "I use exclusively white oak. It's watertight, but it also tastes good," says Ed Lutjens, who handmakes barrels for a number of craft distilleries.

|
Sink your teeth into a colorful assortment of tomato varieties, and the difference in flavor from one to another is obvious and delightful. But what about spirits made from different varieties of grain? Could different barley varieties provide the basis, for instance, of distinctively flavored whiskeys?
About forty attendees gathered at Hidden River Farms outside of Montesano, WA in July to learn about just that. That is the site of a research project, supported by funds from the...

At Baltimore bars, tiki cocktails get a
craft makeover
by Wesley Case for
The Baltimore Sun
|
Tom Fabrizio, a bartender at Gunther & Co., shows how to make the 'Death of a Bachelor' cocktail. (Lloyd Fox / Baltimore Sun) |
Until recently, tiki-cocktail culture - which began on the West Coast in the 1930s as nuanced and complex rum-based drinks - seemed redefined by sugary, plastic-bottle mixes of pre-blended Mai Tais and blue-hued hurricanes.
"When I first started bartending, someone asked, 'What's in a Mai Tai? What's in a Rum Runner?' " recalled Nick Ramey, beverage director for local restaurant group Southern Boys Concepts. "Another bartender was like, "I don't know, just make it fruity and sweet, and nobody will know the difference.' That's sort of the reputation tiki had for a long time." These days, Baltimore bartenders are reclaiming tiki's original intentions...

County hopes how-to guide will nurture craft beverage industry
by Ryan Marshall,
The Frederick News-Post
|
Kyle Pfalzer, co-owner of Tenth Ward Distilling Company, leads a tour. |
Partly through conscious policymaking and partly through inertia, Frederick County has become central to Maryland's craft beverage industry. Now, the county seeks to expand that industry with a guide designed to help the owners of new breweries, distilleries and wineries navigate some of the complexities such businesses often encounter.
The county wanted to create an easy how-to guide with suggestions, steps and resources for owners of both large and small craft beverage operations, said Katie Albaugh, an agriculture business development specialist with the Frederick County Office of Economic Development. "This is really for everyone. It doesn't matter what size you are," Albaugh said.

At the You & Yours Distilling Co., bar and distillery manager Trevor Bowles (right) talks to tour participants.

Fresh juice is fabulous and tonic is terrific, but at the new You & Yours Distilling Company in San Diego's East Village, the best cocktail mixer might be a jigger of knowledge.
[Last] week, You & Yours became the latest local spirits maker to offer tours of its distillery. For $25, you can step into the back room for a close-up look at the custom-built hybrid still, a full tutorial on how the five-month old distiller whips up its vodka and gin and a generous tasting of the results.
