There is almost nothing better than the luscious taste of summer tomatoes! We wait all year for that fresh, off-the-vine flavor. Nothing compares! Here's a great way to combine sweet grape or cherry size tomatoes with mozzarella and just-picked basil for a simple appetizer in a bite-sized package. 

There are now so many different varieties and colors of miniature tomatoes and they're all in season now! So, get creative if you dare.

~Easy Breezy Caprese Skewers~

Grape or cherry tomatoes (Any color you prefer)

Pearl mozzarella balls

Fresh basil leaves

Balsamic glaze (this is much thicker than balsamic vinegar)

Freshly ground pepper 

4 inch toothpicks

 

Tip: Fresh from the garden or roadside stand is always best, but you can use tomatoes from the store. The longer party toothpicks are available at BJ's. 

 

Wash tomatoes and dry. 

Drain mozzarella balls. 

Make sure basil leaves are clean and free from any sand or dirt. 

Gently tear or cut large leaves into 2 or 3 pieces each. Kitchen scissors are great for this!

 

For each skewer, start with one tomato (If using grape tomatoes, skewer them sideways rather than long ways. They fit better this way.) Add a mozzarella ball, then either a small leaf of basil or a piece, folded in half so exterior side of leaf is exposed. Add another tomato, then another piece of basil and a final mozzarella ball. 

 

Make as many as you like or need. We prepare 4-5 per person.

Arrange skewers on platter and lightly drizzle with balsamic glaze. Grind some fresh black pepper over all and serve. 

 

Can be refrigerated, but remember that tomatoes always taste best when at room temp!
