Some of you have been asking about what is happening with our Kickstarter Campaign to erect a Neon Sign, and with good reason. Our plan had been to push hard to raise the capital and have the sign finished by the end of January. As it turns out, we have been negotiating lease terms related to the sign with the building ownership team and we hope to be wrapping this up very soon. Thank you for your patience and continued interest in this effort.

Thanks again for your patronage; drop us a line with comments at messages and be sure to swing by for a delicious libation or two!  Our regular coupon is a 2 cocktails for $20, so make a note of the secret code and swing on in!

Happy Holidays, Merry Christmas, & Happy Hanukkah from the Stookey's Team!

Solario - Bartender & Libations Creator Extraordinaire

This month we choose to honor one of our own -- Solario, Stookey's Club Moderne Lead Bartender & Creator of Delicious Libations. Mr. Matthew Solario (who prefers to be know simply as "Solario"), was born and raised in Sacramento, California. He always wanted to live in San Francisco and made the move down here to attend the Academy of Art University to study Illustration.

One of the things that is great about Solario is his drive to be the best he can be at those activities that he finds interesting.  A demonstration of his drive was when he decided to move to San Francisco. He wanted to live in the inner (older) part of the city and he needed a deal so he decided that by continually refreshing Craigslist postings for apartments every few minutes he would the best opportunity to score! It took time, but it worked! He got a place in the Tenderloin for a song!

If you are one of Solario's regulars you likely know that Solario is a huge sports fan, (SF Giants, 49'ers and San Jose Sharks -- and also the San Antonio Spurs). Even so, we bet you didn't know that he played NCAA-level baseball for the Academy of Art and was a member of the boxing club as well!

While at the Academy of Art, he took a job as a waiter at Sears Fine Foods. Sears has a full liquor bar along with their restaurant. He always had a fascination with liquor ("I just thought liquor bottles were cool looking") and began to to take a deep dive into the literature surrounding bartending to learn as much as he could about the subject. He finally got a break when somebody called in sick and they needed somebody to fill in. He remembers the first drink he served: A Brandy Old Fashioned. The customer must have liked it as he ordered another. Success!!

Solario has worked in several places over the years since he earned his BFA in 2011 from the Academy of Art University. These include La Trappe in North Beach which is know for their enormous selection of beers. Later, he worked for Poquito, the Ecuadoran bar/restaurant in the Dog Patch. It was there that he really got into Pisco. (Pisco is Peruvian Brandy) The Pisco Sour is a cocktail made famous in San Francisco and Solario developed a special technique for whipping up the cocktail that he calls "The Reverse Dry Shake". By doing this you enhance the amount and quality of foam. A participant in cocktail competitions from time to time himself, Solario notes that many of the "World Champion" Bartenders (i.e. competition-winning) now are sporting the technique.

Solario eventually moved on to Social Kitchen & Brewery (Inner Sunset) where he learned about the operation of a brewery/bar/restuarant and began to experiment with beer in cocktails. He obviously figured something out as one of the favorites on Stookey's menu (just rolled off, though) is his creation - the Alondra. You can still order it by name from any of the team.

When we opened the bar in January 2015, he heard about us through some of the press regarding our bar and had come for cocktails on a couple of occasions. Solario loves history and is a bit of a San Francisco/California-phile. He fell in love with the Stookey's Club Moderne concept and when he heard about an opening in June 2015, he applied. The rest, as they say, is history.

Outside of bartending, Solario has many interests. Among other things, he has been developing a retro-1980s-90s video game, he loves attending Comic-Con in San Diego each year, and he hosts a trivia night at The Board Room in North Beach once a week.

Needless to say, we are absolutely thrilled to have on our team -- a World Class Bartender in Solario!

Cocktail of the Month
December's Special Cocktail
Barbary Coast
A number of cocktails with this name are found referenced in the cocktail literature. This particular recipe dates from around 1927 and has many of the characteristics of a cocktail from this period.

Firstly, it includes cream which seems to show up a lot around this time. My guess is that you had a lot of new drinkers who weren’t used to spirit-forward cocktails (i.e. all ingredients contain alcohol) that popular in the pre-Prohibition period. Since we are talking about Prohibition time (1927),  spirits were illegal to distill and probably not so good in quality; therefore, cocktails worked better if they had the softening effects of cream.

In addition, there seemed to be a mania at this point for cocktails with more than one spirit in them.  The Barbary Coast combines both gin and scotch. On paper this doesn’t work at all but in reality it works very well. It reminds me of an Alexander but with a little bite. ~ Tim Stookey

3/4 oz Gin
3/4 oz Scotch
3/4 oz Creme de Cacao
3/4 oz Cream

Combine all ingredients in a cocktail shaker with ice. Shake vigorously for 20 seconds. Double-strain into a coupe glass. Garnish is a dusting of cocoa powder.
