Happy Holidays from One Ridgway!  We are excited to share new "One Ridgway specials" and prizes and to highlight Restaurants in this month's edition. 
  
Ridgway has quietly been developing one of the region's hottest food scenes.  This fact was just highlighted in 5280 Magazine in "Ridgway Might Just Be Colorado's Tiniest Foodie Town." Our little town now offers a wide range of excellent dining options that includes, gourmet European-style cuisine, authentic ceviche, farm fresh creations, expertly made sushi, artisan pizza and ice cream, traditional Asian cuisines, "gnarly" tacos, unique and historical bar and grills, specialty breakfast and sandwich spots, local micro-brews and more.  

Multiple award winning chefs and food innovators are helping to make Ridgway one of the Western Slope's up-and-coming foodie town.  Many of our restaurants are sourcing local meats and vegetables and creating a burgeoning farm-to-table scene.

While our restaurants are continuing to blossom and receive regional recognition, like most of our local businesses, they must also cope with busy high-seasons and challenging low-seasons.  Those who have lived in our community for a while know that these low seasons can lead to us losing great local businesses.  As residents, we are the ones who get to most enjoy our restaurants and also the ones who are best positioned to provide patronage during these slower, cold months.  We hope you can take the time to enjoy some great meals this month at our many delicious destinations!

The Lotus Root

Ridgway received a special new addition to its restaurant scene this summer.  Honga Im had owned the highly acclaimed, Honga Lotus Petal in Telluride for almost 25 years.  She has now opened the Lotus Root at the Chipeta in an effort to get back to her roots.  One of Honga's primary motivations in making the move was to return to being more intimately involved in creating beautiful, conscientiously sourced food for her community.  Lucky us!

The Lotus Root offers a unique selection of Asian fusion cuisine, including expertly crafted and sourced sushi. Explore the full menu, including the Lotus Root's signature bowls, here.  They also offer a wonderful tea menu and their knowledgeable staff can highlight different teas just for you with various medicinal benefits.   

Honga has made knowing exactly where the food comes from a founding principle.  This value of Lotus Root, and an increasing number of our Ridgway restaurants, means they are sourcing food from local farms and ranches whenever possible.  This principle is core to the One Ridgway initiative.  Because when you are supporting the Lotus Root, and many of our other restaurants, you know you are not only supporting that local business, but local farmers, ranchers and others throughout the community. 

In fact this winter Lotus Root will be rotating its menu, and will have Yurtstead Farms providing produce, Happy Hogs for eggs, Homestead Beef for meat as well as features from Blue Corn Candles and Wishing Star Pottery.  What a wonderful collection of local businesses!

The origins of Honga's craft is five star restaurants from around the world to tiny food charts throughout Asia and beyond.  Honga works to bring together different styles, techniques and experiences to create her menu.  Honga graduated from the University of Colorado with a degree in Fine Arts as a painter and sculptor.  An avid adventurer and outdoorswoman, Honga has worked as a ski patroller, a sponsored athlete and ski model.  Honga lives with her son and daughter right here in town.  What better place than Ridgway for an artist, mother of two, talented skier, and master chef!

The Lotus Root is nestled into the lovely atmosphere of the Chipeta Resort, and along with all of our local restaurants, is a wonderful way to support our community while enjoying an exceptional meal.
