Cheesy News: Milton Creamery Prairie Breeze™ Cheddar
Hailing from Southeast Iowa, Milton Creamery was started in 2006 as a joint venture between local Amish dairy farmers and Rufus & Jane Musser. Today the creamery is solely run by the Mussers and their 3 sons and they continue to use milk provided by local Amish families.

Prairie Breeze™ is their twist on a well-aged white Cheddar style cheese, aged for a minimum of 9 months, made with Vegetarian Rennet and no added color. Sweeter than your typical cheddar with lots of flavor, crumbly yet creamy with a little crunch from the calcium crystals developed during the aging process."  You can't help but think of a field of tall grass blowing in the wind when you eat this cheese.

All Rhone Valley Wines plus Cape Ann Brewing Table
Tomorrow we have two pairings at Pairings. The first has wines from the Rhone Valley, poured and presented by Jo-Ann, who reprises her role as the Rhone Lady (also known for her roles as the Napa Lady and Languedoc Lady, a knowledgeable and enthusiastic friend with many hats). At the second table, Josh will be pouring brews from Cape Ann (Fisherman's Brews and Deadeye DIPA). Little did I realized that we'd be having "Ann's" at both tables.

The Rhone Valley is best known for red wines and Jo-Ann will pour four of them. Nevertheless, we love rich white wines so we present two of them to start the Pairing. A dessert wine is a "bonus" seventh wine. First is a white blend from Vacqueyras, a special area in the southern Rhone area, floral, round and elegant and perfect with Montamoré, a bright and clean Wisconsin cheese. The second white is all Roussanne, with stone fruit flavors and nice in the mouth. See how it pairs with Artichoke Parmesan Tapenade.

The first red is a new Cotes-du-Rhone blend that uses whole cluster fermentation to add complex "ethereal" flavors to the wine. Petit Agour Brebis Basque goat cheese will pair well with its deep nutty taste. Next is an old favorite, the Mon Coeur ("My Heart") blend from Chave, which is one of the more powerful Cotes-du-Rhones you'll taste, wonderful with French style Pork and Duck Terrine. Then it's another red blend, this time from Beaumes-de-Venise, elegant and complex with nice tannins and a long follow-through. It will stand up nicely to Fourme D'Ambert, a delicate blue cheese with mushroom overtones. The final red is a Gigondas from Piaugier, our favorite winery in Lori and Ray's visit to the area. This complex and rich wine can age, but is delicious right now. Taste it with a bite of Croque Monsieur with Mustard Espelette. A dessert wine from Beaumes-de-Venice (see red blend above) made with Muscat, with melon and peach flavors and a clean sweetness, will be great with Mango Pineapple Chutney on Brie.

Josh, from Cape Ann Brewing will be at the other table with four brews. The light and refreshing pils with Cheddar and Scallion Cheese Sticks is first. Then it's the Fisherman's Brew, an American Amber, smooth and malty, paired with Montamoré. Then it's their IPA, a well balanced version paired with Croque Monsieur. Deadeye is a double IPA, "the mother of all hoppy beers", big enough to be great with Honey Mustard Virginia Peanuts.

Happy Pairings! Lori and Ray
