Law makes it easier to enjoy Iowa's craft distilleries
By Randall Weissman, Chicago Tribune
|
A new law allowing alcohol sales by the glass at Iowa distilleries makes this a better time than ever to check out the Hawkeye State's craft distillers.
|
Combine Americans' growing fondness for brown liquors with the nation's biggest corn crop, shake it with a new law that allows alcohol sales by the glass and you have a winning recipe for Iowa distillers.
Illinois' neighbor has been a source for fans of John Barleycorn dating to Prohibition, when Templeton Rye became known as one of Al Capone's favorite libations. Today, craft distillers are sprouting up across the state. And as of this past summer, a new law permits distillers to sell their product in cocktails at the distillery, as opposed to just being allowed to offer small samples and bottle sales.

Still Austin Whiskey Co. begins distilling whiskey
by Nino Marchetti, The Whiskey Wash
The Texas craft whiskey scene right now is certainly one of the most exciting in the country. Top craft distilleries in this market focused on whiskey include the likes of Balcones and Garrison Brothers, but it doesn't mean there's not room for other players to emerge. One of those, Still Austin Whiskey Co., out Austin, Texas, could give the others a run for their money in the long term.
Still Austin Whiskey Co., according to those behind it, is a so-called "grain-to-glass" distillery, which is a loosely defined industry term meaning they do most, if not all, of their production on site using local ingredients where possible. For these guys this is said to mean pretty much everything except growing the grains themselves: milling, mashing, fermenting, distilling, barreling and bottling of their spirits happen all in house.
...Another thing which grabs us about them is the consultants they've brought in to help them make top flight craft whiskey. These include Nancy Fraley*, a well regarded distilled spirits professional and blender who's behind, among other things, the successful Jos A. Magnus & Co. distillery out of Washington D.C.

North Carolina has rich distillery history
by Bob Buckley, Fox8 News
LEWISVILLE, N.C. -- Let the good times pour. "We're in a renaissance of spirits, right now," said Matt Williams, one of the owners of the Old Nick Distillery in Lewisville.
But, really, it's just a recreation of what once was. "At one point, North Carolina had more distilleries than just about anybody else," said John Trump, the author of "Still and Barrell: Craft Spirits in the Old North State," a book that both tells the history and current state of distilling of whiskey and the like in North Carolina.

Behind the scenes: keeping a craft distillery going
Production hasn't had a moment to let up, as a busy summer has morphed right into a busy fall, and we can't imagine anything better than all the humming, steaming, puddling, and smells wafting around from busy fermenters and stills. Ok, maybe not all the smells, but, you know... Not only are we adding an automatic cork presser-inner to our bottling line, Joel and Ted have been fabricating a bunch of other new bits as well. They're building stands and conveyors and lazy susan-like collection table, ingeniously using fun parts like skateboard bearings and rotisserie motors and salvaged steel to turn the used machines we bought into a full...
