BULLSEYE SHOOTING POINT CHURCH CREEK ARROWHEAD
Grown in the mouth of the Nassawadox Creek in the lower Chesapeake Bay. Cultured on hard white sand, the oysters have a pleasant level of salinity balanced with the rich sweetness of the bay. Moderate salt, plump firm meats and a sweet finish. Grown in the center of the United Nations Biosphere Virginia Coast Reserve's Atlantic waters. Your taste this amazing place of barrier islands and coastal wilderness. Oceanic salinity, minimal minerality and abrupt sweet finish. Cultured along the shore of Chatham Vineyards in protected waters to give it a deeper cup and thicker shell. The salt is less pronounced with hints of seagrass in the finish of these oysters with enough brine to savor the velvety essence of the Chesapeake.  Cultured within earshot of the Atlantic Ocean surf and are repeatedly delicately tumbled  which results in a plump, petite SALT BOMB! A perfect buttery East Coast Oyster to plate with a kumamoto- same salt and size. Small in stature but mighty in flavor.

Stone Bass (Meagre)

Stone Bass, or Meagre are typically found in the deep waters of the Mediterranean.  It hasn't been until recent (1996) that aqua-cultured Meagre have become relevant.  Here, they use a water recycling system that has reduced water consumption, minimized environmental impact and protects the fish from various diseases. The fish are raised in floating cages in the strong currents off the coast of Greece and are fed a nutritious fish meal and fish oil diet. The fish feed comes from certified fisheries and are GMO-free with no antibiotics. Meagre has a delicate taste and excellent texture that is suitable for grilling, frying, baking or broiling. Expect large flakes with a clean, ocean flavor.
Arctic Char
Product of Iceland- Best Choice
Arctic Char is a distinct species typically menued as a signature seafood because of its gourmet appeal. The meat is moderately firm with a similar but milder flavor than salmon. Raised in land based closed system tanks, Arctic Char grow in a continuously sand filtered system of a Pure Iceland saltwater environment. Arctic Char is slowly grown, feeding on natural organic ingredients, which assures a premium product. Arctic Char is a great menu item if you're looking for something to replace salmon on your menu, but need fish with a bit more character than trout.
Barrelfish-  Product of the USA

A deep water fish caught off the coast of South Carolina, the Barrelfish is rarely caught recreationally and are almost exclusively grouper longline by catch. Barrelfish are distinguished by its fine-flavored flesh that responds well to any grouper or snapper preparations, and but its cooked color, much whiter than almost any grouper.
