October is my favorite month! Back to school jitters are gone and routine takes hold- I LOVE routine! But, with routine can come ruts; especially at dinner time. Below is a recipe for scratch made fajita seasoning- great with chicken, beef, or shrimp. But, instead of using the main dish as traditional fajitas try making fajita bowls! They are a very healthy way to enjoy all the delicious flavor of Mexican food. My favorite part of this recipe is the way in which everyone can customize their own dinner
without extra work for mom or dad!

Fajita Bowls
Seasoning:
2t chili powder
1T cumin
1t onion powder
1t garlic powder
1t paprika
1/2t oregano
1/4t salt
Fajitas:
1 pound chicken or beef or shrimp
2 bell peppers, cut into strips
1 onion, sliced
1/4C vegetable oil
Items for bowls:
Cooked brown rice
black beans
fresh lime
avocado
cilantro
jalapeno
Combine all seasoning ingredients and mix with oil. Place meat and onions and peppers in a gallon plastic bag. Add oil and seasoning mixture and close tightly. Incorporate well and let sit in fridge for about 20 minutes. Spread mixture onto baking sheet and discard mixture and bag. Bake at 400 degrees for about 20 minutes, until meat is cooked through (shrimp will take less time). Assemble in bowls and enjoy!
