Distillers across the country are now experimenting with new and heritage styles of rye, barley, and wheat.
"We're making American single malt, not Scotch in America," said Matt Hofmann, the master distiller at Seattle's Westland Distillery. "For instance, almost all Scotch is distilled from one barley varietal, done as pale malt, either peated or unpeated."
He paused, then spread his hands to emphasize the question: "Why would you not use all the variety?"

San Diego Distillery catches fire in Spring Valley

SAN DIEGO (KGTV) - A fire at San Diego Distillery in Spring Valley started in a still, firefighters said Tuesday.

Firefighters were just 400 yards away at the Heartland Fire station when they got the report of the fire on Via Orange Way at 1:30 a.m.

The flames were knocked down in minutes. The still, which the owner calls 'Zelda', was damaged, along with parts of the building. Smoke also damaged several nearby businesses.

A husband and wife team started the distillery three years ago to make craft whiskey. They don't know how much it will cost to resume operations.

College, distilleries partner in new 'Craft District'

South Puget Sound Community College in Olympia [WA] is building a new facility to teach distillery courses as part of a development called the Craft District.

Developers have secured two distilleries, Sandstone from Tenino and Heritage from Gig Harbor to be part of the project along with a craft brewer, who has yet to be announced.

The property is across the street from a portion of the old Olympia brewery, the landmark facility that stopped making beer in 2003.
The City of Tumwater and the Craft District's developers hope their success will trigger action at the old brewery.

Jeptha Creed Distillery overlooks the 250-year-old Shelbyville farm.

When you drive in for the first time, Jeptha Creed seems a bit of an anomaly. Commanding the parking lot, a beautifully restored 1932 Ford truck with a load of bourbon barrels in its bed sports the new craft distillery's name. Atop a hill behind it towers a gorgeous, freshly built, 1,760-s.f. clubhouse, rife with iconic timber framing and wide windows overlooking lush Shelby County farmland. Turns out that numerous nods to old-fashioned ways - more classic farm equipment and vehicles, including a 1915 Ford Model T - are scattered around the property. A 1975 International grain truck actually hauls corn for the spirits' base from the field to the grain bin. Here tradition is a byword.

"Our core values include respecting our elders and family history and honoring the sacrifices that have been made to allow us the independence and liberties we now enjoy," explains Autumn Nethery, marketing manager of the business that she helped start in November of 2016. "Our family motto is 'Don't forget where you come from.'"
